How To make Cold& Spicy Noodles
Stephen Ceideburg 1/3 c Finely chopped cilantro
2 tb Tahini
2 tb Miso
1 t Dark sesame oil
3 tb Orange juice
1/2 ts Red pepper flakes
2 Green onions, finely chopped
1/2 Red bell pepper, minced
4 c Cooked udon or soba noodles
-drained, rinsed and drained -again
This can be prepared a day ahead. The bit of tahini (sesame paste) creates a creamy sauce that contrasts well with the crisp vegetables. In a large bowl, combine cilantro, tahini, miso, oil, orange juice, and red pepper flakes. Toss in green onions, bell pepper and noodles. Ingredients required to make the chicken, spinach and poached egg hot soba noodles (1 person):
Chicken thigh x 1
egg x 1
spinach x 40g
spring onion x 1
soba x 90g
yuzu seasoning x 1 tsp
potato flour x 1 Tbsp
****if you would like to add some heat / spice to your hot soba noodle soup, you can add some shichimi togarashi (add to suit to your desired taste)****
for the soup -
water x 650ml
dark soya sauce x 50ml
cooking sake x 15ml
mirin x 15ml
sugar x 3 tsp
katsuo bushi bonito flakes x 10g

Other toppings that can be added to your soba noodles:
- stir fried vegetables such as bean spouts, carrots, cabbage, onion and shiitake mushrooms.
- you can add vegetables directly to the soup and cook for a few minutes on a low heat i.e. bean sprouts, asparagus, broccoli, shiitake mushroom, mange tout.
- scrambled eggs
- any meats i.e. beef, chicken, pork, duck breast
- seafood i.e prawns, lobster, scallops, squid etc

Akagi Joshu soba 270g
Morita soba tsuyu straight 500ml
Yutaka premium (hon) wasabi paste 42g
Clearspring sushi nori 7 sheets 17g
Yutaka katsuobushi - bonito flakes 20g
House shichimi togarashi 18g
Kikkoman soy sauce all purpose 250ml
Mizkan honteri mirin-fu 355ml
Hinode ryorishu cooking sake 400ml
Yutaka yuzu seasoning sauce 100ml
Clearspring organic Japanese sencha green teabags (20 per pack)
