Boozy Coffee Pecan Buttermilk Pie
Boozy Coffee Pecan Buttermilk Pie
We decided to change things up with our classic buttermilk pie for the Holidays and add a pecan topping to it. The result was so delicious! The pecan topping took this already amazing pie to another level. We also added coffee liqueur to it but you don't have to. Coffee would also work well!

Ingredients for pie:
1 cup buttermilk
2 cups sugar
3 eggs
3 rounded Tbsp flour
1/2 cup softened butter
1 tsp vanilla
(We added coffee liqueur but you can leave this out)
Cream sugar and butter together with mixer. Add flour and eggs and mix well. Add buttermilk and vanilla and mix well. Pour into uncooked pie shell. Bake at 350 degrees for 50 to 60 minutes until firm when shaken or toothpick comes out clean in center. Ours took 75 minutes because of the extra buttermilk, vanilla and liqueur. Let cool before adding topping.
Ingredients for pecan topping:
1/2 cup dark Karo syrup
2 Tbsp brown sugar
1 Tablespoon cornstarch
2 teaspoons vanilla
About 1 ounce coffee liqueur
1/2 cup pecans, chopped
1/3 cup coconut flakes
Mix together Karo syrup, brown sugar and cornstarch in a pan on medium heat. Stir continuously until mixture starts to bubble. Once it bubbles stir for about 5 minutes. After 5 minutes, remove from heat, stir in vanilla, pecans, coconut and liqueur. Pour over cooled pie.
