How To Make Coffee Liqueur With Rum Or Bourbon
I was able to taste still Austin's coffee Liqueur a while ago with their distiller Harry. Harry gave me a few pointers on how to go about making my own so here goes . . . .
First, we need a base spirit. We can use any aged spirit, but bourbon and rum were specifically suggested so that's what I am going to use.
Then we need coffee beans. I used Robbert Harris Italian, dark roast. Like I say in the video I do wonder if something more mellow would have been better.
Next up is cocoa nibs. They add a wonderfully full and rich flavour and mouthfeel. I would definitely not skip these.
Mascerate for 3-5 days. When you think the flavour is right filter the mixture with a coffee filter.
Proof down to your desired ABV, I hit 30%. And add the simple syrup or maple syrup.
At this stage, you may want to let the mixture sit for another few days and filter again.
Ingredients:
400ml of base spirit (Rum or Bourbon)
1 Cup of coffee
1/2 Cup of cocoa nibs
Water to proof down with (filtered or bottled is best)
simple syrup or maple syrup to taste (I used 4 soup spoons)
Oh yeah, I totally get that the UJSSM (Uncle Jesse's Simple Sour Mash) is not actually a bourbon. But we are making spirits at home and its more about the imitation than what it should legally be called.

???? DIY Coffee Liqueur - like Kahlua, but better
When we started this process of figuring out how to make Kahlua coffee liqueur at home, we found most of the recipes were too sweet, and lacked complexity of flavour. They all had only one note - and it was weak coffee flavoured vodka. It just didn't work for us.
So we started our DIY Coffee Liqueur with fresh dark roasted coffee beans that we gently smashed in a mortar and pestle. We then added ½ a vanilla bean, and bathed this in 151º over proof rum. You really want to layer flavour over flavour, and the higher alcohol helps dissolve more of the oils in the coffee - it also keeps the final product from being to cloyingly sweet when you dilute it later with simple syrup. Rounding out the complex flavour profile is a cinnamon stick, some orange peel, and crushed cocoa nibs. The Dude would be proud!

Ingredients:
2 cups (500 mL) 151º overproof rum (75.5% alc)
1 cup (250 mL) dark roast ground coffee (we just smash in a mortar and pestle)
1/2 vanilla bean
½ cinnamon stick
2- 3 cocoa nibs, optional
1 slice of orange peel, optional
simple syrup

Method:
Slice the vanilla bean it open lengthwise and then scrape out the inside of the bean.
Place the bean, scrapings, course ground coffee and rum to a sealable Mason jar.
Give it a shake and set it aside someplace dark.
After 24 open the jar and toss in the cinnamon stick, cracked cocoa nibs, and orange peel.
Give it a shake and set aside for another day.
Strain the mixture through a coffee filter, and mix in the simple syrup… Now this is another place where your personal taste will come into play.
We like ours on the less sweet side so we start by mixing 1 part simple syrup to 3 parts coffee infusion; then we taste and start adjusting from there.
Ideally you want to end up with about 40% alc by volume.

Easy Homemade Kahlua Coffee Liqueur Recipe
Learn how to make a fabulous coffee liqueur at home. Here's a quick and easy homemade Kahlua recipe that requires very few ingredients and the ingredients are easy to find. This coffee liqueur is made with instant coffee, your choice of whiskey or vodka, real vanilla beans and some sugar. You can drink Kahlua straight or use it for a multitude of cocktails and desserts. This recipe makes a nice gift for the holidays as well so make sure that you double the recipe if you are wanting to give some away because your not going to want to share.
Liz's Homemade Kahlua
4 Cups water
1.5 Cups Instant coffee
6 Cups Whiskey or Vodka
6 Cups Sugar
5 Vanilla Beans
Combine the sugar, instant coffee and water together in large pot and heat on a low to medium setting until sugar and coffee are dissolved, stirring very frequently. Remove from the heat and let cool to room temperature. Meanwhile, cut your vanilla beans in half and scrape out the paste inside and add to your jars. Once the sugar and coffee mixture is room temperature, add your alcohol in and stir to mix. Pour your mixture into the jars with the vanilla beans. Cap and let sit out of direct sunlight for 4 weeks. Shake the jars every few days. After the sitting time, strain and put into bottles. ENJOY!!
