How To make Coffee Liqueur
Ingredients
4
cup
sugar
2
cup
water
2/3
cup
instant coffee
10
each
coffee beans (whole)
1
fifth of vodka*
1
each
vanilla bean (2-3 inches)
Directions:
Combine water, sugar, and coffee in a saucepan and bring to a full boil. Skim off the froth and allow to cool thoroughly. Pour into the container. Add vodka, coffee beans (optional but will add a fuller flavor), and vanilla bean. Store in a dark place for 3 weeks. Strain and filter. Ready to serve.
Notes:
*A brandy/vodka mix may be substituted for a simulated "Kahula"
*A rum/vodka mix may be used to simulate "Tia Maria"
Container: 1/2 gallon jar

In this episode I show you how to make DIY Coffee Liqueuer and use it in a Revolver Cocktail, to celelbrate International Coffee Day. It's might seem like quite a process but it's well worth it, trust me. For the base I used Sailor Jerry spiced rum. The Revolver is a caffeinated version of the Old Fashioned, created in 2004 by Jon Santer, a San Francisco bartender.

The Revolver:
• 60 ml (2 oz) Woodford Reserve bourbon
• 15 ml (1/2 oz) DIY Coffee Liqueur
• 2 dashes homemade Orange Bitters
Here is the episode about homemade orange bitters -
DIY Coffee Liqueur:
• 300 ml (10 oz) Sailor Jerry spiced rum
• 50 g dark roast coffee
• 5 cocoa beans
• ½ halved vanilla bean
• 1 small piece of whiskey barrel oak
• 0,3 g Ceylon cinnamon
Sous vide the ingredients for 4 hours on 60˚C (140˚F). Let that cool before filtering and mixing with the Cold Brew Coffee Syrup.
Cold Brew Syrup:
• 300 ml filtered water
• 20 g ground coffee
Leave it in the fridge for 12 hours, then filter it through a coffee filter. You should end up with around 250 ml of Cold Bew Coffee to which you add:
• 220 g demerara sugar
• 30g muscovado sugar
Stir until the sugar dissolves (avoid heating up to keep the cold brew… cold).

HOW TO MAKE COFFEE LIQUEUR - BRUCE'S LIQUOR LAB | BAR TALK & COCKTAILS
This one has been on the back burner for a while now. We've been crafting a new series to add to the Bar Talk ensemble I like to call - Bruce's Liquor Lab. Over the years a lot of you (the viewers) have requested that I do some episodes on how to make your own liquor. So to answer some of your requests, I'll be doing just that. In this series I'll be making/experimenting with do it yourself spirits and liqueurs. These won't be as quick and easy like mixing together a cocktail. A lot of this stuff will take time and a lot of patience. If you don't know me by now, I never seem to do things the quick and easy way. This will be a lot of fun. To start I'm going to show you how to make some Coffee Liqueur. I'll be honest with you...I like this so much better than Kahlúa. Initially it will take about 2 weeks to make, but if you really want to do it properly, you'll let it sit for 3 months before you start drinking it!

Right now we only have this one completed due to the fact we filmed it long before the Covid-19 Pandemic. We do have many planned to do once things start to return to normal...however some of these liqueurs take months to make so I couldn't tell you just yet when the next Liquor Lab will air. COFFEE LIQUEUR
6 OZ (170 G) FINE GROUND FULL BODY COFFEE
1 LEMON
3 CACAO BEANS
1 VANILLA BEAN
1 PINT 16 OZ (473 ML) US OR 20 OZ (568 ML) RUM
2 CUPS (500 G) TURBINADO SUGAR
1 PINT HEAVY CREAM OR WHIPPING CREAM (OPTIONAL)

ADD THE GROUND COFFEE TO A 26 OZ. (750 ML) SEALABLE GLASS JAR.
FINELY PARE THE LEMON RIND (MIND THE WHITE PITH) AND PUT IT IN THE JAR.
ADD THE CACAO BEANS (CRACKED AND SMASHED) AND THE VANILLA BEAN (CUT AND SCRAPED)
ADD THE RUM. SEAL IT AND STORE IT IN A COOL DARK PLACE. SHAKE IT ONCE A DAY FOR 1 WEEK.
AFTER 1 WEEK, ADD THE SUGAR AND SHAKE WELL TO DISSOLVE IT. LEAVE IT COOL AND DARK FOR 7 MORE DAYS SHAKING TWICE DAILY.
AFTER THE SECOND WEEK, STRAIN THROUGH A NUT MILK BAG OR SIEVE LINED WITH A PIECE OF FINE MUSLIN INTO A BOTTLE.
SEAL IT AND LEAVE SIT FOR 1 MONTH. 3 MONTHS IS BETTER. KEEPS INDEFINITELY.
OPTIONAL
WHEN READY TO SERVE, ADD EQUAL PARTS CREAM TO COFFEE LIQUEUR. MIX WELL. STORE IN THE REFRIGERATOR. WITH CREAM ADDED IT WILL KEEP CLOSE TO 6 MONTHS.

How To Make Coffee Liqueur With Rum Or Bourbon
I was able to taste still Austin's coffee Liqueur a while ago with their distiller Harry. Harry gave me a few pointers on how to go about making my own so here goes . . . .
First, we need a base spirit. We can use any aged spirit, but bourbon and rum were specifically suggested so that's what I am going to use.
Then we need coffee beans. I used Robbert Harris Italian, dark roast. Like I say in the video I do wonder if something more mellow would have been better.
Next up is cocoa nibs. They add a wonderfully full and rich flavour and mouthfeel. I would definitely not skip these.
Mascerate for 3-5 days. When you think the flavour is right filter the mixture with a coffee filter.
Proof down to your desired ABV, I hit 30%. And add the simple syrup or maple syrup.
At this stage, you may want to let the mixture sit for another few days and filter again.
Ingredients:
400ml of base spirit (Rum or Bourbon)
1 Cup of coffee
1/2 Cup of cocoa nibs
Water to proof down with (filtered or bottled is best)
simple syrup or maple syrup to taste (I used 4 soup spoons)
Oh yeah, I totally get that the UJSSM (Uncle Jesse's Simple Sour Mash) is not actually a bourbon. But we are making spirits at home and its more about the imitation than what it should legally be called.
