Monster Espresso Chocolate Chip Cookies
These are some of the best chocolate chip cookies I have ever had. The espresso chips make this cookie. If you haven't tried the espresso chips, get some and make some cookies. I made fudge with them over the holidays and it was amazing. This is a simple cookie to make and so delicious. I hope you try it. Recipe below.

Ingredients
1 1/2 cup butter, softened
3/4 cup granulated sugar
1 1/2 cups brown sugar
2 eggs
1 1/2 Tbsp vanilla
4 1/4 flour, self-rising
1 cup espresso chocolate chips
1 cup semi-sweet chocolate chips
Preheat oven to 375 degrees
Cream together the butter and the sugars. Add the egg and vanilla. Mix until blended together. Add in dry ingredients until completely combined. Fold in the chocolate chips. Drop onto parchment lined sheet pan by 1/2 cup fulls. Roll into balls. 6 per baking sheet. Add extra chips to the top of dough if desired. Bake 12-15 minutes or until golden around the edges and soft in the center. Allow to cool on pan for a few minutes. Transfer to wire rack to complete cooling. Store in air tight container.

1 cup (225g) unsalted butter, cut into 1/2-inch (1.3cm) chunks
12 ounces (340g) semisweet or bittersweet chocolate
3 1/4 cups (415g) all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon fine sea salt
1 1/2 cups (320g) packed light brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
Flaky sea salt, for sprinkling (optional)

Coffee Infused Chocolate Chip Cookies Recipe. Welcome Friends! Welcome back to the
kitchen today we're going to make a coffee infused chocolate chip cookie Recipe and
we're going to use a little bit of science and technology to help us get the

Ingredients
285g butter
35g coffee beans
½ vanilla bean, split and scraped
225g dark brown sugar
185g white sugar
2 eggs
325g all purpose flour
30 mL (2 Tbsp) tapioca starch
12g (2½ tsp) salt
5g (1 tsp) baking soda
7 mL (1½ tsp) Carboxymethylcellulose (CMC)
250g semi sweet chocolate chips
Method:
Preheat oven to 325°F and a water bath to 180°F.
Place the butter, coffee beans, and vanilla bean into a vacuum seal bag; seal and cook in the 180ºF water bath for 1 hour.
(If you don't have a vacuum sealer, a Ziplock bag will work almost as well.)
After an hour remove the infused butter from the water bath and strain through a fine mesh strainer.
Allow the infused butter to cool to around room temp.
Mix together the flour, tapioca starch, baking soda, carboxymethylcellulose, and salt.
Cream together infused butter, brown sugar, and white sugar, until light and fluffy.
Cream in the eggs one at a time.
Mix in flour mixture until it forms a smooth dough.
Mix in the chocolate chips.
Scoop the cookie dough onto a cookie sheet and bake 15-18 minutes - or until cooked.

The Best Chewy Chocolate Chip Cookies
Servings: 12
INGREDIENTS
½ cup sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup butter, melted
1 egg
1 teaspoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon baking soda
4 ounces milk or semi-sweet chocolate chunks
4 ounces dark chocolate chunks (or your preference)
PREPARATION
Preheat oven to 350°F/180°C.
In a large bowl, whisk together the sugars, salt, and butter until a paste has formed with no lumps.
Whisk in the egg and vanilla, beating until light ribbons fall off the whisk.
Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix too much. This will cause the gluten in the flour to toughen which will result in cakier cookies.
Fold in the chocolate chunks evenly, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches of space between cookies and 2 inches of space from the edges of the pan so that the cookies can spread evenly.
Bake for 12-15 minutes, or until the edges have started to barely brown.
Cool completely, and enjoy!

Commercial kitchens, and recipe developers rely on ‘Bakers Percentage’ to work out what a baking recipe should be. Pretty much every Baking recipe (cakes, cookies, bread, etc) have a base formula that is known to work and give a certain result. Recipe developers take these ‘knowns’ and manipulate the percentages to create new recipes.
Baker’s Percentage is expressing all the ingredient amounts by weight as a percentage of the weight of the flour… not that complicated, but we’ll do a video in the future all about that.
In the end - we change the proportion of butter and sugar to get a cookie that is chewy, crispy, or cakey.
