In this episode of In The Kitchen With Matt, I will show you how to make an apple streusel coffee cake also commonly called an apple crumble coffee cake. This recipe for easy apple coffee cake with a yummy streusel or crumb topping is so yummy! Although there is no actual coffee in the cake, it is commonly called coffee cake because people over the years have enjoyed a slice with a cup of coffee. I don't drink coffee, but enjoy mine with milk. If you want a normal coffee cake, you can leave the apples out and don't put the crumble or streusel on the top. Either way, this cake recipe is super easy to make, if I can do it, you can do it. Let's get baking!

Ingredients:
1 large egg
1/2 cup buttermilk or use normal milk (120ml)
1/2 cup white granulated sugar (100g)
1/4 cup butter or oil (57g)
1 1/2 cups cake flour or all-purpose/plain flour (180g)
1/4 tsp. baking soda (1g) leave it out if using normal milk
1 tsp. baking powder (5g) double it if using normal milk
1/2 tsp. salt
1/2 tsp. cinnamon (1g)
3 medium apples or 2 large apples (granny smith, fuji, gala, etc.)
Streusel/Crumble Topping
3 Tbsp. butter, softened (45g)
1/2 cup white granulated sugar (100g)
1/3 cup of all-purpose/plain flour (40g)
1 tsp. cinnamon (2g)

Soft, flavorful, and delicious, this Crumb Cake recipe is the best you’ll ever make. The cake is so moist and buttery that it’ll practically melt in your mouth. You will also not be able to get enough of the crispy but soft crumb topping! Perfect for breakfast or dessert, this cake recipe is a classic. BEST Streusel Coffee Cake Recipe
The BEST EVER Streusel Coffee Cake - a 9x13 pan of coffee cake with cinnamon sugar center and streusel topping. It's the perfect breakfast cake to eat with coffee - and great for brunch!
Recipe:

CINNAMON FILLING:
⅔ cup (134g) packed brown sugar
¼ cup (31g) all-purpose flour
2 teaspoons ground cinnamon
STREUSEL TOPPING:
¼ cup (57g) unsalted butter, melted
¼ cup (31g) all-purpose flour
1 cup (200g) packed brown sugar
2 teaspoons ground cinnamon
CAKE:
3 cups (372g) all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
½ cup (113g) unsalted butter, melted
1 ½ cups (300g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup (237ml) milk
INSTRUCTIONS
Preheat oven to 375°F. Spray a 9×13 pan with nonstick cooking.
Whisk cinnamon filling ingredients in a small bowl. Set aside.
Place streusel ingredients in a medium bowl and stir with a fork until combined (will look like wet sand). Set aside.
Whisk flour, baking powder, and salt in a small bowl. Set aside.
Mix melted butter and sugar in a large bowl with a hand mixer at medium speed. Mixture will be grainy. Mix in egg and vanilla. Stir in milk, then stir in flour mixture until just mixed.
Spread half of cake batter in prepared pan. Sprinkle with cinnamon filling. Top with remaining cake batter. Sprinkle with streusel topping.
Bake for 30-35 minutes, or until a toothpick comes out clean. It cuts best when completely cooled, but you can serve it warm. Store in an airtight container for up to 3 days. Cooled cake can be sliced and placed in an airtight container and frozen for up to 1 month.
RECIPE NOTES
You can substitute vegetable oil for the butter in the cake batter but I do not recommend it in the topping.
You can also mix the cake by hand with a whisk.
I recommend using room temperature eggs if you remember to take them out of the refrigerator.
You can also make this with nonfat, 2% or nondairy milk. I recommend whole milk. If you’re using nondairy milk use a higher fat one. More fat in the milk makes a more moist cake.

CHERRY COFFEE CAKE (New Recipe not in our Cookbooks)
1/4 CUP BUTTER OR MARGARINE (ROOM TEMP.)
1 PKG. WHITE CAKE MIX
1 PACKET 1/4 OZ. EACH DRY YEAST
1 CUP ALL-PURPOSE FLOUR, (WHITE LILY)
2 EGGS
1 CAN (1 LB. 5 OZ.) CHERRY PIE FILLING
2 TBSP. SUGAR
8 OZ. CREAM CHEESE (CUBED) IS OPTIONAL
Preheat oven to 375 degrees. If using
convection set temperature at 350 degrees.
In a medium mixing bowl, reserve 1/2 cup dry
cake mix. In a large bowl add remaining cake
mix with yeast, flour, eggs, and 2/3 cup warm
water. Mix until blended well with a dough
whisk or spoon. Spread dough in a greased 13
x 9 x 2-inch baking pan; set aside. In a bowl
blend reserved cake mix with butter & sugar to
make streusel topping. Mixture will be
crumbly. Set it aside. Spoon pie filling evenly
over dough in pan. Place cubed cream cheese
on top of cake if desired (optional).
Sprinkle streusel topping over filling. Bake
immediately at 375 degrees.
for 30 minutes. If desired, frost with glaze.

1 C. CONFECTIONERS SUGAR (SIFT IF LUMPY)
1 TBSP. CORN SYRUP
1 TBSP. WATER
