2 tb Plus 1/4 cup (1/2 stick)
-unsalted butter 2 tb Plus 1/2 cup sugar
2 tb Water
2 lg Ripe bananas, peeled, cut
-into 1/2-inch-thick rounds 1 ea Unsliced loaf egg bread
-(1-pound), ends trimmed, -bread cut into 6 slices -(each about 1-1/2 inches -thick) 2 c Milk (do not use low-fat or
-nonfat) 6 lg Eggs
2 1/2 ts Ground cinnamon
1/4 ts Vanilla extract
TOPPING:
1 1/2 c Thinly sliced almonds,
-toasted 1/4 c (packed) golden brown sugar
1/4 c Quick-cooking oats
2 tb All purpose flour
Maple syrup Melt 2 tablespoons butter in heavy large skillet over medium heat. Add 2 tablespoons sugar and 2 tablespoons water and stir until sugar dissolves. Continue stirring until mixture is foamy, about 2 minutes. Add bananas; cook until tender, stirring occasionally, about 5 minutes. Transfer to small bowl; cool. (Can be prepared 4 hours ahead. Cover and chill.) Preheat oven to 350

Crispy French Toast Casserole | Ideal Leftover Dessert Recipe
Enjoy crispy french toast casserole made from leftover bread pieces. Are you tired of all the corner pieces from the bread or from making bread crumbs from all the leftover edges that your kids just won’t eat? I know I am. So in my pursuit of not making any more crumbs, I made this recipe of French Toast Bake or French Toast Casserole and it turned out so amazing that it has become a regular. Soft yummy french toasted topped with crisped oat streusel covered in rich maple syrup with a scoop of vanilla ice cream. Now that is comfort food at its best!
This recipe is super quick and easy. You can use whole slices of bread for it or the end/corner pieces and the edges. If you are using whole slices, use a day old bread as it absorbs the liquid better. Whatever you use, just cut them into strips or small squares. I personally prefer strips. I usually collect all the corner pieces of the bread and edges from the sandwiches in a ziplock and put them in the fridge or freezer. Fridge; if I have a lot and I know I will be making it within the same week and freezer; if I know it will take time to have enough for a large dish. If you have it in the freezer, just remember to take the bag out of the freezer and let thaw in the fridge overnight.
In my house, we love having this for breakfast. So I usually bake a large dish and we enjoy it throughout the week. Which makes it perfect for people with a busy lifestyle. Bake a dish over the weekend and just take out, microwave and enjoy. Not only that, but you can also assemble it the night before and bake it for brunch or any party, really. It can also be customized and you add a variety of fresh and dry fruits and nuts to it. It really is the perfect, easiest dessert that will be enjoyed by all.
Ingredients:
- 500-550gm or 12-13 slices of bread
Egg Mixture:
- 6 Eggs
- 1 cup Milk
- 1/2 tsp Salt
- 2 tbsp Sugar
- 1 tsp Vanilla Essence
- 1/4 tsp Cinnamon Powder
- 1/4 tsp Ground Nutmeg (optional)
Topping:
- 2 cup Quick Rolled Oats
- 1 cup Brown Sugar
- 1/2 tsp Salt
- 1 cup Butter
- 1/2 cup Chopped Pecans or Walnuts (optional)
- 1 cup Semi-Sweet Baking Chocolate Chips (optional)

OVERNIGHT BAKED BANANA FRENCH TOAST CASSEROLE
INGREDIENTS
CASSEROLE
1 lb loaf Sourdough Or French Bread, cut into chunks
8 large eggs
2 cups (480ml) milk (whole or 2%)
1/2 cup (120ml) heavy whipping cream
1/2 cup (104g) sugar
1/4 cup (36g) light brown sugar, unpacked
2 tsp vanilla extract
1 1/2 tsp ground cinnamon
6–7 medium sized bananas, chopped*
STREUSEL TOPPING
3/4 cup (98g) all-purpose flour
3/4 cup (169g) firmly packed brown sugar
1 tsp cinnamon
1/2 cup (112g) salted butter, cut into pieces
INSTRUCTIONS
1. Grease a 9×13 inch casserole dish.
2. Add the bread chunks to a large bowl and set aside.
3. In another large bowl, whisk together the eggs, milk, cream, sugars, vanilla extract and cinnamon.
4. Pour the egg mixture over the bread chunks and add the chopped banana, then gently stir to combine everything.
5. Pour the bread mixture into the prepared casserole dish and spread evenly in the pan. Cover the casserole and store in the fridge overnight.
6. When ready to bake the casserole, preheat the oven to 350°F (176°C).
7. Bake the casserole for about 35-40 minutes, or until it’s at your desired level of doneness.
8. While the casserole bakes, combine the dry ingredients for the streusel, except for the butter.
9. Add the butter and mash into the dry mixture until it forms a crumbly mixture.
10. When the casserole looks about done, remove the casserole from the oven and crumble the streusel over the top of the casserole.
11. Continue baking the casserole for about 5 minutes, or until the streusel is melted over the top.
12. Serve the casserole warm with syrup.
NOTES
* I sliced the bananas and cut each slice into quarters.
