Epic French Toast
Ingredients:
2/3 cup half-and-half
1 large egg
4 slices Trader Joe’s cinnamon swirl bread (or other bread, preferably slightly stale and sliced fairly thick)
Optional add-ins: ½ teaspoon vanilla extract; pinch of cinnamon
For serving: pure maple syrup, whipped cream, or fruit
Instructions:
Melt a pat of butter on a griddle over medium heat.
Pour the half-and-half and egg in a pie plate or shallow bowl; whisk to combine. Add vanilla and cinnamon if using, and whisk again. Dip one slice of bread in the egg mixture and let it soak for a few seconds; then flip and soak the other side.
Pick up the soaked bread and let any excess liquid or egg drain off. Place the soaked bread on the hot griddle and cook until golden brown, about 3 minutes. Flip, and cook the other side until golden brown, about 3-4 minutes.
Serve, warm, with maple syrup or whipped cream and fruit. This French Toast is also good with nothing, as the cinnamon and sugar give it plenty of flavor!
Make-ahead tip #1: The custard (half-and-half, egg and vanilla) can be whisked together the night before and stored in the refrigerator. Similarly, if you only make 1 or 2 slices of French Toast and have left over custard, the custard can be stored in the refrigerator and used again the next day.
Make-ahead tip #2: This French Toast can be made the night before, cooled and refrigerated, and then reheated in the microwave and served the next morning.

(Sig)nature Dish: Brioche French Toast Sticks
The first time I made these, I rolled them around in Cinnamon Sugar and they tasted just like churros from the fair! Now, I tend to tone it down a bit (by just sprinkling, not rolling), but they are delicious as ever, easy to dip in syrup, and a quick twist on a classic fave.
FRENCH TOAST STICKS RECIPE:
INGREDIENTS:
1 loaf Brioche French Bread (cut into 10-12 slices thick slices and then into thirds)
2 Eggs
2 cups Almond milk
1/4 tsp Vanilla powder (or a dash of vanilla extract)
3 tablespoons light brown sugar
1/4 tsp Cardamom
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1/4 teaspoon kosher salt
1 1/4 cup All Purpose Flour
2 teaspoons Baking powder
Vegetable Oil (enough to fill a cast iron skillet about half way, or enough to cover your sticks in whichever frying vessel you are using)
Optional toppings:
Cinnamon Sugar (for sprinkling or rolling, depending on preference)
Powder sugar
Maple syrup
DIRECTIONS:
1.Slice your loaf of bread into about 10 thick slices. You want each slice to be about an inch thick. Then cut the slices in thirds to create inch-wide “sticks”. Set aside.
2.In a mixing bowl, whisk together all the dry ingredients.
3.Start heating your vegetable oil in your cast iron or frying vessel of choice, and let the temperature get to about 315 degrees. I always like to fry on a lower temp so that the outside of our food doesn’t burn before the inside is thoroughly cooked. I also like to use cast irons for frying because they maintain an even temp the entire time.
4.In a separate bowl or measuring cup, whisk together the almond milk and eggs.
5.Pour your wet milk mixture into the dry flour mixture, and begin whisking vigorously until you have a smooth batter. Once your oil is hot enough, you can begin the dipping and frying process.
6.Using tongs, dip each stick briefly into the batter, coating evenly. Shake off any excess batter, and immediately place the stick into the oil. Repeat with a few sticks at a time so that you do not overcrowd your frying pan. Let the bread cook for about 2 minutes on each side, flipping when the first side reaches a deep golden brown color.
7.Once your color is even, remove with tongs, one at a time, and set on a wire rack placed over a baking sheet to drain off excess oil. While still wet with oil, immediately sprinkle liberally with cinnamon sugar so that the sugar will stick to the oil. Alternately, you can spread cinnamon sugar in small dish and use your tongs to roll each hot stick around in it right after removing from the oil. This will completely cover the French toast in cinnamon sugar, but I find this method to be a bit too sweet if I’m also going to use maple syrup. All personal preference though! Once you’ve applied your cinnamon sugar, just let them cool a few minutes, then plate them, top with some powdered sugar and syrup, and enjoy!
