8 oz EGG BEATERS
1/3 c MILK
1 t CINNAMON
1 t VANILLA
2 tb MARGARINE
10 ea SLICES WHITE brEAD
IN A SHALLOW BOWL, COMBINE EGG BEATERS, MILK, CINNAMON AND VANILLA. IN A NON-STICK SKILLET, OVER MEDIUM HEAT, MELT TWO TEASPOONS MARGARINE. DIP brEAD IN EGG BEATERS MIXTURE TO COAT BOTH SIDES. trANSFER TO SKILLET AND COOK FOR 3 MINUTES ON EACH SIDE. REPEAT WITH REMAINING MARGARINE AND brEAD. SERVE WITH MAPLE SYRUP OR CONFECTIONERS SUGAR. Cap'N Crunch French Toast Breakfast
This is the perfect meal for a lazy weekend breakfast. Cap'N Crunch cereal can be replaced with any cereal of your choice including Frosted Flakes, Corn Flakes and Cinnamon Toast Crunch. Recipe can be doubled or even tripled.
Cap'N Crunch French Toast
Oil for deep frying
2 eggs
1/2 cup half and half or milk of choice
2 tablespoons sugar
1/4 tsp salt
1 tsp vanilla extract
1/4 tsp butter flavoring (optional)
Cinnamon (optional)
Nutmeg (optional)
1-2 cups Cap'N Crunch cereal, ground fine
2-4 slices of white bread, including Texas Toast or Brioche
Heat frying oil (approximately 4-8 cups) to 375 degrees.
In a shallow bowl, combine all wet ingredients and beat until mixed well.
Grind Cap'N Crunch in a mini food processor, such as a Nutribullet or Magic Bullet, or place inside of a large ziplock style bag and crush with a spoon or rolling pin. Pour crushed cereal into a plate.
Dip sliced bread first in egg wash, followed by the crushed cereal, covering completely. Set to the side on parchment lined sheet and repeat until all bread is coated. Let sit on parchment for about 5-10 minutes.
Deep fry french toast for about 30-40 seconds per side. Remove from oil and let drain on a baking rack.
Serve immediately with butter or syrup, if desired.
Egg Scramble:
Simply Potatoes Hash Browns, cooked according to package directions
3 eggs
1/4 cup egg whites or egg beaters
2 tablespoons half and half
Salt and pepper
In a small bowl, mix all together and beat lightly with a fork.
Butter for pan, about 1 tablespoon
1/2 cup Quattro Formaggio Cheese (or Italian Blend shredded cheese)
Melt butter in medium saute pan. Add eggs and cook until just soft, about 1 minute. Lower heat to low and add cheese and cook for another minute. Add hash browns and turn off heat completely. Serve immediately.
Bacon:
On a microwave safe plate or paper plate, line with a full sheet of paper towels. Line bacon on top of paper towel, about five pieces should fit. Cover with another paper towel and cook on high heat for about 4 minutes. If bacon is not cooked through, continue to cook at 30 second intervals until desired doneness.
