No Knead Cinnamon Bread with Brown Sugar and Cinnamon Swirl Center | Tastes Like a Cinnamon Bun
This is THE BEST cinnamon bread recipe! So quick and easy to make. A no-knead cinnamon bread that tastes like gooey rich cinnamon rolls. Topped with a delicious vanilla drizzle. It is awesome toasted! Look for the complete recipe with instructions below.

CINNAMON BREAD (no knead)
2 cups flour (unbleached or regular all-purpose)
1 cup granulated (white) sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg, beaten
1/4 cup butter, melted and let to cool a bit
For the Cinnamon Swirl
Ingredients:
1/2 cup brown sugar (pack the sugar into the measuring cup)
1 tablespoon plus ¼ teaspoon cinnamon
Glaze Ingredients
1/2 cup powdered sugar (if it’s lumpy, it's ok - you can sift it)
1/2 teaspoon vanilla
1 tablespoon milk
How to Make:
First: Preheat oven to 350° F.
The Cinnamon Swirl: Mix together the cinnamon and brown sugar. Break up any large lumps in your brown sugar. Set aside for later.
The Pan: Butter a 9” x 5” loaf pan. Make a parchment paper sling for it as I did in the video. You don’t have to do this but it will help when you get ready to remove your bread from the pan. Set Aside.
The Batter: Whisk or sift together the flour, sugar, baking powder and salt in a large bowl.
In a small separate bowl (Tip: Or if it’s big enough, you can use the measuring cup you melted your butter in.), combine the milk, eggs and butter. Stir into the dry ingredients just until combined. Don't over mix. Just make sure the flour is wet.
Pour half the batter into the buttered loaf pan. Using about half the cinnamon sugar mixture sprinkle it on top of the batter in the loaf pan. Top with the other half of the batter. Top it off with the remainder of the cinnamon sugar mixture. Gently swirl with a butter knife several times to make the swirl.
Bake for about 40-45 minutes or until a toothpick inserted in the center part of the bread comes out clean. (Mine took 40 minutes.) Cool for 10 minutes. Then remove the bread from the pan to a wire rack and let it cool completely before going on to the glaze.
Now the Glaze:
In a small bowl combine the powdered sugar, the milk, and the vanilla. Stir until mixed completely.
Finally: Drizzle the glaze over the top of your cooled cinnamon bread. Let this set up for about 10 minutes before diving in.

All you need is????
For the Cinnamon swirl:
150g light brown sugar
2 tbsp cinnamon
120g unsalted butter, melted
For the Cake:
360g plain flour
200g caster sugar
4 tsp baking powder
300ml whole milk, room temperature
1 tsp vanilla
2 large eggs, lightly beaten, room temperature
110g unsalted butter, melted
3 large ripe bananas, mashed
For the Glaze:
200g icing Sugar
50ml milk
Tin size: 8x10”
Bake 160C (fan) 40-45 mins - or until the top is golden and a toothpick comes out clean

Homemade Cinnamon Swirl Bread, Pudding Parfaits, & MORE! | A Day in a Southern Kitchen!
Hey family! It's a full day in the kitchen in this video! Well, the kitchen and the mudroom! ???? Frist we make some sausage strip biscuits for breakfast, then we make some chocolate pudding parfaits & cinnamon swirl bread! After that we clean up a storage shelf in the mudroom. Not as much fun as cooking/baking, but it's gotta be done! ???? Supper is an easy one tonight! We make some fresh cornbread to go with our leftovers from the night before.
Cinnamon Swirl Bread recipe:
Ingredients: NOTE: This is for one loaf, I doubled it in this video to make two. ????????
1/2 Cup Softened Butter
1 Large Egg
1 Cup Sugar
1 Tsp Vanilla
1 cup of milk
2 Cups self-rising flour
Cinnamon mixture:
1/3 Cup Sugar
1 tsp Cinnamon
Directions:
Preheat Oven to 350 and Grease Loaf Pan.
In a large bowl cream together the softened butter, eggs and sugar.
Next add the milk and mix well. Add the flour and mix until combined.
In a Greased Loaf pan add 1/2 of the batter.
In a small bowl, mix together the 1/3 Cup Sugar and 1 tsp cinnamon.
Add 3/4 of the cinnamon mixture to the batter and swirl through the batter.
Add the rest of the batter and add the remaining cinnamon sugar mixture on top.
Bake in a preheated oven at 350 degrees for 40-45 minutes or until a toothpick comes out of the center clean.

recipe:
2 tsp instant yeast
2 tbls sugar
2 tbls soft butter
1 tsp salt
2 tbls milk powder
1 1/2 cups warm water
1 tbls honey
1 tbls vanilla extract
4 cups bread flour
Knead 5 minutes
1st rise 1 hour
Powdered sugar and cinnamon for ribbons of swirl
1 egg with 1 tsp water beaten for brushing the top.
add cinnamon sugar to top and sprinkle
2nd rise 30 minutes
bake 350 for 30-35 minutes until golden brown

FOR THIS RECIPE, YOU'LL NEED:
▪220g or just under 1c warm water
▪90g or 3/8c room temp buttermilk
▪5g or 2tsp instant yeast
▪65g or 1/3c sugar
▪525g or 4 1/4c ap flour (11.7% protein)
▪14g or 2.5tsp salt
▪130g or 9tbsp melted butter
▪Eggwash (1 egg + couple teas water)
▪cinnamon sugar blend (10g / 4tsp ground cinnamon, 100g / 1/2c brown sugar, 2g / 1/3tsp salt)
▪150g or 1c raisins
Into a medium mixing bowl, measure water, buttermilk, yeast, sugar, flour, salt, and melted butter. Stir to combine with a spoon. Once combined well, use a very wet hand to squeeze and mix until fully combined. Cover and let sit for 30 minutes.
Conduct 4-5 strength building folds followed by 10-12 slap and folds as shown @1:45. Cover again and let sit at room temp for another 30 minutes. Conduct another set of stretch & folds + slap & folds. Cover and allow to ferment at room temp for 90 minutes.
Turn out dough onto a lightly floured work surface and flour top of dough and rolling pin. Roll out into approximately 24x12-16 sheet that's about 1/2 thick. Brush top of dough with egg wash. Sprinkle with cinnamon sugar mixture followed by raisins in an even layer. Roll tightly (starting at a short edge) then cut in half lengthwise. Twist one half over the other, keeping the cut sides facing up (see @6:26).
In the meantime, butter all sides of an 8.5x4.5 (or 1 pound) loaf pan. Place into well buttered bread pan. cover with a towel and let rise at room temp for 1 hour. Brush top with egg wash. Bake in a preheated 400F/204C oven for 30min. Tent with foil, lower oven temp to 350F/176C, and finish baking for 15-20min. Once cooled, cut into slices, toast, add a little butter and enjoy.
