To start, we'll soak one cup of buckwheat in water, ensuring it's not completely submerged. This soaking process preserves the fiber and nutrients essential for our body. After 12 hours, we'll grind the soaked buckwheat into a batter with a pancake-like consistency. Remember not to add excess water during grinding.
The batter then undergoes a 24-hour fermentation period, during which it doubles in volume and develops live fermentation bubbles. You'll witness the magic of this natural process. It's important not to over-stir the batter to preserve the fermentation and ensure the bread rises perfectly.
After adding optional mix-ins like pumpkin seeds and chia seeds, the batter is poured into a container and left to rise in a preheated oven at 450 degrees Fahrenheit (230 degrees Celsius) for 45 to 55 minutes until golden brown. Let the bread cool completely before slicing

For the Dough:
1 ¼ cups plain Greek yogurt
4 tablespoons melted butter
2 ½ cups all-purpose gluten-free flour
½ teaspoon xanthan gum (omit if your flour has it already)
2 tablespoons granulated sugar
1 ¼ teaspoons baking powder
½ teaspoon baking soda
For the Filling:
¾ cup packed brown sugar
¼ cup granulated sugar
3 teaspoons ground cinnamon
1 tablespoon melted butter
For the Glaze:
¼ cup melted butter (see recipe note for a dairy-free version)
2 cups confectioners sugar
1 teaspoon vanilla extract
3–5 tablespoons hot water
Preheat the oven to 425F. Bake for about 20 minutes. Yield: 10 rolls.

INGREDIENTS:
250ml milk
14g dried yeast
80g caster sugar
500g gluten free white bread flour
75g butter
1 tsp xanthan gum
1 tsp baking powder
1 large egg
1 tsp vanilla extract
FOR THE FILLING:
35g butter (melted)
150g light brown sugar
2 tbsp ground cinnamon
FOR THE ICING:
200g icing sugar
1 tsp vanilla extract
2 tbsp boiling water
I use Allinson's Easy Bake Yeast (in UK supermarkets' baking aisles) or Dove's Farm Yeast (in the free from aisle).

Recipe
Raw (green) buckwheat groats, water and some seeds are all you need to make this incredibly easy fermented buckwheat bread. This yeast-free, vegan and gluten-free bread is incredibly easy to make, it's soft and moist and healthy! This is surely going to become your new favourite recipe!
Day 1
500 gr raw buckwheat cover with 600 ml filtered water. Stir, cover with a plate and leave for 24 hours.
Day 2
After 24 hours open a bowl, do not rinse, add 150 ml filtered water, 1 tsp of salt and 1 tsp of coconut sugar/ honey. Blend everything together using an immersion blender. Cover with a plate and let sit for another 24 hours.
Day 3
Now its time to add any seeds/herbs you like.
I added 1 tsp of ground garlic, 1/2 cup sunflower seeds and 1/4 cup hemp hearts.
Gently mix in your add-ins and transfer the mixture into baking form. Top it up with some seeds and bake in a preheated oven at 180° C/ 356° F for 50-90 minutes. The bread is ready when a toothpick comes out dry.
Let it cool for 15-20 minutes and enjoy!

Buckwheat Bread Recipe that is very easy to make. No flour, no oil, gluten free, yeast free, dairy free, egg free, vegan, IBS.
Full written recipe:
Ingredients:
500g (1.10lb) Hulled Buckwheat Groats
750ml water
1 tsp salt
1 tsp maple syrup
30g sesame seeds and/or any other seeds/herbs of your choice (optional)
Process:
Put 500g of Hulled Buckwheat Groats into a bowl.
Pour in 600ml water and stir.
Cover and let sit for 12-24 hours.
Next day add in 1 tsp of salt, 1 tsp of maple syrup and 150ml water.
Put into a blender and blend into a smooth, uniform batter.
Transfer back to the bowl.
Cover and let sit for 24 hours. It will ferment.
Next day add in 30g of sesame seeds and/or other seeds/herbs of your choice and mix (optional).
Pour batter into a prepared baking pan.
Sprinkle some seeds on top.
Bake in a pre-heated oven at 218ºC (425ºF) for 45-60 minutes or until golden brown and properly cooked.
