Amazing Apple Pie | Fruits A to Z
Apple pie is a great traditional American dessert. Here is a great recipe for a delicious apple pie using homemade pie crust, a variety of apples, and a caramel sauce for the filling. Everyone knows A is for Apple, but why stop there? This is episode 1 of my series Fruits A to Z, where I'll make different dishes focused on a fruit for every letter of the alphabet.
Ingredients
Single Pie crust
½ cup butter
1 ¼ cups all-purpose flour
¼ teaspoon salt
1 tablespoon vodka
¼ cup water, or as needed
Filling for two nine-inch pies
2 large granny smith apples
2 large fuji apples
1 large cosmic crisp apple
½ cup unsalted butter
3 tablespoons all-purpose flour
½ cup white sugar
½ cup packed brown sugar
¼ cup water
1 teaspoon cinnamon
½ teaspoon nutmeg
Preparation
Pie Crust
Dice a stick of butter and chill in the freezer
Add flour and salt to a food processor and blitz to combine
Add the butter and pulse until it develops a crumb structure
Slowly pour in the water and vodka while pulsing until it forms a loose dough
Transfer the dough onto a pastry mat or flat surface and pat it till it stays together, then form it into a disk
Wrap in plastic wrap, then place in the fridge to chill
Pie Filling
Peel, core, and thinly slice the apples
Melt butter in a large pot over medium heat, add the flour, and cook for a few minutes to make a light roux
Add the sugars and water and cook for another couple minutes to make a caramel sauce and finish with the spices
Add the apples to the caramel sauce and stir gently till the apples are thoroughly coated
Assembly
Preheat oven to 425 F
Roll out the pie crust and place it in a 9-inch pie pan press to the sides and create dimples in the bottom, then cut off the edges
Roll out the second pie crust and cut it into about one-inch strips
Put the apple filling into the pan, mounding slightly in the middle
Make a lattice top, traditionally by performing an intricate weaving pattern, but the strips can simply be overlaid for a similar, if not as elegant, result
Place cut scraps back along the edge and crimp with fingers to create a nice crust
Brush with an egg white egg, then place the pie on a foil-lined sheet pan
Bake in preheated oven for 15 minutes, then reduce heat to 350 F and cook for 35 to 40 minutes until apples are soft and the crust is golden brown
Let cool for a couple of hours before slicing
Serve with ice cream or whipped cream; enjoy!

Homemade Fig Newtons | Fruits A to Z
Figs are a great and underrated fruit and essential for fig newtons. Here is my recipe for homemade fig newtons that are way better than the store-bought original.
F is for fig in my series Fruits A to Z, where I'm making different dishes focused on fruit for every letter of the alphabet.
Ingredients
Pastry Dough
½ cup (113g) butter softened
½ cup(100g) packed light brown sugar
1 large egg and 1 egg yolk
1 cup (125g) all-purpose flour
1 cup (120g) wheat flout
1 teaspoon nutmeg
1 teaspoon (4g) baking soda
1 teaspoon orange zest
Pinch of salt
Fig Filling
9 ounces dried mission figs
1 teaspoon orange zest
1/2 cup water
2 tablespoons Triple Sec
1 orange juiced
Preparation
Pastry dough
Place sugar and butter in a mixing bowl or bowl of a stand mixer and beat until smooth (cream together)
Add 1 egg and 1 egg yolk and mix, scraping down the sides as needed
In a separate bowl, combine the AP flour and wheat flour, nutmeg, baking soda, and salt
Add a pinch of orange zest
Add the flour mixture on low speed and mix until it comes together as a rough ball
Dump out onto a clean surface and form into a 4x8 inch rectangle, then wrap in plastic wrap and chill for at least 30 minutes and up to an hour
Fig Filling
Remove the stem tips from the figs and add them to a medium-sized pot
Add water, triple sec, fresh orange juice, and orange zest
Cook on medium-high heat till all the liquid evaporates and the figs have puffed up 15-20 minutes
Allow to cool for a few minutes before adding to a food processor and blending until smooth, about 20 seconds
Place on a foil-lined cooking sheet, spread into a 6x10-inch rectangle, cut into five strips, and chill in the fridge
Assemble Fig Newtons
Divide dough into 5 equal pieces
Working one at a time, roll dough out to a 3x12 inch rectangle; use a pasty cut to straighten the sides
Lay a strip of fig filling in the middle, fold over pastry on each side, press slightly to seal, cut into 6 1.5 inch pieces, and carefully place on parchment lined baking sheet
Preheat oven to 350F or 325F with convection
Repeat step 3 with the rest of the dough and filling
Bake for 12 to 15 minutes till light golden brown
Place in an airtight container with paper towels while still slightly warm to help the cookies soften and become chewy like the original
Enjoy!
