How To make Cinnamon Breakfast Cake
2 c Flour
4 ts Baking powder
1/2 ts Salt
1/4 c Seedless raisins
2 tb Sugar
1 t Cinnamon
4 tb Brown sugar
4 tb Shortening
1 Egg, well beaten
1/2 c Milk
1 tb Melted butter or butter
-substitute
Sift flour, measure, and sift with baking powder, and salt. Add brown sugar; cut in shortening with 2 spatulas. Add egg and sufficient milk to form a soft dough. Add raisins. Spread in well-oiled and floured cake tin. Pour melted butter over top of cake. Sprinkle with 2 tablespoons sugar and cinnamon. Bake in hot oven (435? F) 20-25 minutes. CINNAMON COFFEE CAKE MUFFINS
BAKING INSTRUCTIONS:
▪️ Bake in the oven at 350 degrees F for 9-12 minutes, or until a toothpick comes out clean.
▪️ Let your muffins cool for 5 minutes in the pan, before transferring to a cooling rack to cool for 10 minutes before adding icing drizzle.

My apple recipes have been very very popular on my channel, therefore I thought I would bring you another recipe as we seem to have a lot of apple lovers. This cake/loaf is perfect with a cup of coffee or tea! Enjoy!

Apple Cinnamon Loaf Recipe | Apple Cinnamon Tea/Coffee Cake
i n g r e d i e n t s
1/3 cup brown sugar
1 tsp ground cinnamon powder
2/3 cups white sugar
100gms butter softened
2 eggs - at room temp
2 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 cup warm milk
2 apple, peeled and thinly sliced
m e t h o d
1. Preheat your oven to 170c and line your loaf pan with parchment paper.
2. Peel and dice apples, add into a bowl followed by brown sugar and cinnamon powder. Toss and place aside.
3. In a bowl, add butter and sugar. Beat
4. Add eggs and vanilla essence. Incorporate into the mixture.
5. Sieve through flour and baking powder. Fold very gently into the mixture.
6. Add in warm milk, and mix until combined.
7. Place in the oven for about 40 minutes or until a knife/toothpick can be inserted and come out clean.
8. Enjoy your apple cinnamon loaf with a hot cup of coffee or tea.

Love Starbucks Coffee Cake? This version is even better. Tender, moist, buttery cake topped with crunchy pecan crumbles and a ripple of cinnamon-sugar running through the middle. Served alongside a piping hot cup of coffee or tea, this cake makes a delicious breakfast treat or afternoon snack!
Pan size: 8 x 4 inch (20 x 10 cm) loaf pan
INGREDIENTS
3 large eggs at room temperature
1 teaspoon (5mL) vanilla extract
½ cup (100g) granulated erythritol
½ cup (115g) melted unsalted butter
½ cup (120mL) unsweetened almond milk at room temperature
¼ cup (65g) sour cream or yogurt
2 cups (200g) blanched almond flour
¼ cup (28g) coconut flour
1 ½ teaspoons (6g) baking powder
¼ teaspoon (1g) salt
2 tablespoons (25g) granulated erythritol
2 teaspoons (5g) or more ground cinnamon
½ cup (50g) blanched almond flour
½ cup (65g) chopped pecans
2 teaspoons (5g) ground cinnamon
¼ cup (50g) granulated erythritol
2 tablespoons (30g) melted unsalted butter
powdered erythritol for dusting (optional)
Bake at 340°F (172°C) for 55-65 minutes or until toothpick is clean when inserted.
** If your cake is not yet done but the top is starting to brown, you can cover the top loosely with tin foil or baking parchment – this will make sure the centre continues to cook but the outside doesn't. Keep an eye on it and check it every 5-7 mins until done.
