6-inch (15cm) Blueberry Yogurt Cake
Ingredients:
2 cups (400g) sweetened yogurt
4 eggs
4Tbsp (40 g) cornstarch
1/2 cup (70g) blueberries
Optional:
20 blueberries for toppings

* This cake tastes best when it is cold.
* If you don’t like the smell of eggs, you can also add lemon juice or vanilla extract to the batter
* If you like to use unsweetened yogurt, you can add sugar, honey, or sweetener... The amount can be adjusted according to your preferred sweetness. Because I used sweetened yogurt, I didn't add sugar in this recipe
* If you like to use frozen blueberries, you'd better use it after thawing
* If you use other starch or flour instead of cornstarch, the texture and taste of the cake will be very different.

Blueberry Yogurt Oatmeal Breakfast Cake
Ingredients:
1 ¼ cups old-fashioned rolled oats
1 ¼ cups white whole wheat flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup Greek yogurt
¼ cup milk
2 large eggs
1 ½ teaspoons vanilla
½ cup honey
1/3 cup melted coconut oil
2 cups blueberries
Instructions:
Preheat the oven to 350 F and grease an 8 x 8 inches pan with nonstick cooking spray, set aside. You can line the pan with parchment paper leaving a large overhang on the sides so you can lift the cake from the pan easily.
First, in a large bowl, whisk together dry ingredients: oats, flour, baking soda, baking powder and salt and set aside.
Next, in a medium bowl or measuring cup, whisk together Greek yogurt, milk, eggs, vanilla, honey and melted coconut oil.
Then, add liquid ingredients to the dry ingredients and stir until just combined (don’t overmix).
Finally, gently fold in blueberries and pour the batter in the prepared pan, smooth the top and bake for 45-55 minutes or until the toothpick inserted in the center comes out clean. If the top starts browning too quickly, loosely tent the top with aluminum foil.
Cool for 20 minutes in the pan, then transfer on a rack and cool completely.

BLUEBERRY MUFFIN BAKED OATS! ????
Making the viral TikTok baked oats, but healthier without added sugar and more protein!
Here’s how to make it:
• ½ cup rolled oats
• ½ cup almond milk
• 2 Tablespoons vanilla protein powder
• 1 Tablespoon almond butter
• ½ teaspoon chia seeds (optional)
• ½ teaspoon baking powder
• ⅛ teaspoon cinnamon
• Pinch of salt (optional)
• 2 Tablespoons blueberries, plus more for topping
Stir everything together in a mixing bowl. Add blueberries. Pour into a greased ramekin. (I used an 8 oz mini Le Creuset.) Bake at 350F for 25 minutes. Let cool, top with more almond butter and dive in!

Meal Prep Your Breakfasts in Minutes with this Lemon Blueberry Baked Oatmeal

INGREDIENTS
3 cups (240 g) old fashioned oats
2 scoops (60 g) vanilla protein powder
1 tsp (4 g) baking powder
3 cups (450 g) blueberries frozen is fine
2 tbsp (42 g) maple syrup
1 tbsp (14 g) butter
10 tbsp (150 g) liquid egg whites or 3 eggs
2 cups (480 g) skim milk
3 tbsp (45 g) lemon juice
4 oz (113 g) plain cream cheese i used whipped, regular is fine you'll just need to melt it down
2 tbsp (20 g) sugar
1 tsp (4 g) splenda optional
1 tbsp (5 g) lemon zest
INSTRUCTIONS
FOR THE BAKED OATMEAL
1. Preheat your oven to 350°F.
2. Measure out your berries. If you would like a sweeter end product, sprinkle a teaspoon of splenda or sugar over the top of the strawberries and allow them to macerate. It may help speed up the process if you thaw them in the microwave first.
3. In a large bowl, mix together the oats, protein powder, and baking powder.
4. Add in the egg whites, milk, syrup, 1 tbsp of melted butter, lemon juice, and the berries.
5. Spray a 13x9 pan with oil and add the oat mixture.
6. Mix together the cream cheese and sugar. You can microwave it for a bit to help it soften. Put a few spoonfuls of the cream cheese around your pan and swirl it around as best as you can.
7. Bake for 35-40 minutes.
PLATING
8. This recipe makes 6 servings. Top with lemon zest. Cut the oatmeal into 6 equal pieces.
