How To make Pear Breakfast Cake
1 lg Ripe but firm pear, about 9
-ounces Freshly ground black pepper -(optional) 2 lg Eggs
3/4 c Sugar
1/2 ts Vanilla
2/3 c Brown rice flour
1/3 c Cornstarch
1/2 ts Baking powder
1 tb Vegetable oil
Powdered sugar Preheat oven to 350F. Grease a 10 x 8 x 2-inch ceramic baking dish with butter. Peel, core and dice the pear. Spread in baking dish and top with a light grinding of black pepper, if desired. Beat eggs and sugar until pale in color and very thick. Add vanilla. Combine rice flour, cornstarch and baking powder. Sift over egg mixture and fold in. Drizzle oil around edge of bowl and fold in. Spread batter over diced pear. Bake for 35 minutes. A pale gold, crackly "sugar bloom" like a very thin layer of pastry will form on top of the cake. Dust with powdered sugar before serving from the dish, warm or cold. Serves 8. PER SERVING: 790 calories, 3 g protein, 39 g carbohydrate, 3 g fat (1 g saturated), 53 mg cholesterol, 38 mg sodium, 1 g fiber. Wonderful vanilla brown butter pear baked oatmeal with hints of cinnamon and sweet pears in every bite. This easy pear oatmeal bake is naturally sweetened, filled with warming flavors and makes the perfect winter breakfast or brunch!

These pear, oat and honey muffins make a brilliant breakfast on-the-go or as an elevenses snack with a cup of coffee.

Makes 12 muffins
Ingredients:
250g wholemeal flour
75g rolled oats, plus a few extra to decorate
2 tsp baking powder
1 tbsp ground ginger
2 large free-range eggs, lightly beaten
125ml sunflower oil
1 tsp vanilla extract
150ml runny honey
1 medium ripe but firm pear, grated (about 100g)
250g Skyr honey
65g pecan nuts, roughly chopped
Method:
1. Heat the oven to 180C/160C fan/gas 4 and line the muffin tin with the cases.
In a large mixing bowl, combine the flour, oats, baking powder and ground ginger. In a jug whisk together the eggs, oil, vanilla and honey. Make a well in the centre of the dry ingredients, add the egg mixture and stir in, then mix in the grated pear, Skyr honey and chopped pecans.
2. Divide the mixture evenly between the cases, sprinkle a few extra oats over each muffin, then bake for 25-30 minutes or until a skewer pushed into the centre comes out clean. Cool on a wire rack.
3. Eat as they are or serve topped with a dollop of your favourite Skyr.

A buckle is a type of coffee cake with added fruit. Berries are usually added but since it is fall and pears are being harvested I chose them as my fruit. I also added dried blueberries, because I had them on hand. I also made this another gluten free recipe.

1/2 cup Oat Flour
1/3 cup Rolled Oats

A few grinds of Nutmeg
Cake Batter
1/2 cup Sugar
1/4 cup Butter
1/3 cup Buttermilk
2 cup Oat Flour
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
Pinch of Salt
