How To make Poppy Seed Breakfast Cake
1 c Buttermilk
3/4 c Poppy seeds
1 ts Almond extract
1 c Butter, room temperature
2 1/4 c Sugar
5 Eggs, separated, room
-temperature 2 1/2 c All purpose flour
1 ts Baking soda
1 ts Baking powder
1 ts Cinnamon
Preheat oven to 350F. Grease and flour 10-inch bundt pan. Sift flour, baking powder and baking soda. Cream butter with 1 1/2 cups sugar. Beat in yolks, one at a time, mixing well after each addition. Continue beating until light and fluffy. Add dry ingredients to batter alternately with buttermilk mixture. Beat whites until stiff but not dry. Fold into batter. Spoon half of batter into prepared pan. Sprinkle with remaining sugar and then cinnamon. Add remaining batter, spreading evenly. Bake until tester in center comes out clean, about 1 hour. Cool in pan for 20 minutes. Invert cake onto serving platter. Serve warm. From The Cookie Lady's Files -----

Cake:
· 5 egg yolks
· 120 g sugar
· 90 ml milk
· 40 g flour
· 12 g baking powder
· pinch of anise
· 1/2 tsp cinnamon
· 150 g ground poppy seeds
· 5 egg whites
White Chocolate Cream:
· 300 g white chocolate
· 250 g mascarpone
· 230 ml whipping cream
· 1 tsp vanilla extract
+ 2 tbsp forest fruit jam ( don't use too sweet jam )
Bake at 170°C/340°F
Around 15-20 minutes ( Always check! )
Please don’t forget to check while baking, as you may need a shorter or longer time to bake. This is on the oven without ventilation on!

Lemon Poppy Seed Pound Cake Recipe
This Lemon and Poppy Seed Pound Cake is a flavorful cake, moist and lemony, great for breakfast time or for coffee/tea break.

Ingredients
Makes about 12 servings
1 3/4 cups (220g) all-purpose flour
1/4 tsp (2g) salt
1 1/2 tsp (6g) baking powder
1/4 tsp (1.5g) baking soda
3 tbsp (30g) poppy seeds
lemon zest of 2 lemons
1/3 cup (75g) butter, softened
3/4 cup (150g) sugar
3 eggs
1 tsp (5g) vanilla extract
1/3 cup (70g) oil
1/2 cup (120g) buttermilk
Lemon Glaze
4 tbsp (60ml) lemon juice
1/4 cup (50g) sugar
1. Preheat oven to 350F (180C). Grease and dust with flour one 9x5in (23x13cm) loaf pan.
2. In a medium bowl whisk flour with salt, baking powder, baking soda, poppy seeds and lemon zest. Set aside until ready to use.
3. In a large bowl mix butter with sugar until combined. Incorporate eggs one at a time . Mix in vanilla extract and oil.
4. Gradually add flour mixture alternating with buttermilk, beginning and ending with flour mixture. Pour the mixture into the prepared pan.
5. Bake at 350F (180C) for about 1 hour until a toothpick inserted into the center of the cake comes out clean.
6. Prepare the lemon glaze. In a small saucepan add sugar and lemon juice. Heat over low-medium heat until sugar dissolves.
7. Use a skewer to poke the pound cake over the top and brush the lemon glaze over the warm pound cake.
8. Let it cool completely before serving.

Ingredients:
For the dough:
2 cups (250g) Flour
1/2 cup (115g) Butter
1/2 cup (100g) Sugar
1/4 teaspoon Salt
For the filling:
750ml Milk
1 cup (250g) Ricotta cheese
7 tablespoons (100g) Butter
3/4 cup (150g) Sugar
1 cup + 1 Tbsp (150g) Poppy seeds
1 cup (140g) Semolina
1 teaspoon Vanilla extract
1 Egg
1/4 teaspoon Salt
Directions:
1. Preheat oven to 350F (175C).
2. Make the dough: in a food processor place flour, sugar and salt. Pulse until combined. add butter and process until crumbs are formed. Press 2/3 of the mixture into bottom of 9-inch (23cm) springform pan. Refrigerate while making the filling.
3. Make the filling: place milk, butter and sugar to a saucepan. Heat until butter is melted and sugar dissolves, bring to a boil.
4. When the mixture begins to boil, gradually add semolina, stirring constantly. Add poppy seeds. Keep stirring until the mixture thickens. set aside to cool.
5. In a large bowl beat ricotta cheese, vanilla extract and egg until creamy and smooth. Add chilled poppy seed mixture to the cheese mixture and stir until combined and smooth.
6. Pour the filling over the chilled crust, then spread the remaining dough on top.
7. Bake for 50-60 minutes, until golden. Remove from oven, let cool completely in the pan, then refrigerate for at least 1 hour.
Notes:
• Instead of ricotta cheese you can use cottage cheese/cream cheese or any other soft cheese.
• To the filling you can add raisins and walnuts.
