How To make Chocolate Walnut Creams
2 1/4 c Sugar
1/2 c Light corn syrup
2 c Heavy cream, or non-dairy
Liquid coffee cream 1 lb Semisweet chocolate,
Melted (about 3 1/2 cups) 2 c Marshmallow creme
1 c Water Fondant
1 t Vanilla
2 c English or black walnuts
This is especially good with black walnuts- giving an old-fashioned flavor to the fudge. Combine sugar, corn syrup, and heavy cream and cook to 244 degrees F. Remove from heat and add semisweet chocolate, marshmallow, Fondant, and vanilla. Beat by hand or in a mixer until thick and creamy. Add walnuts. Spread in a 9x13-inch pan. Cut into squares when mixture holds its shape. Makes about 80 pieces.

For those who love coffee, this icecream is a must try. The addition of walnuts gives it a nice crunch.
COFFEE & WALNUT ICE-CREAM
Ingredients
¼ cup walnuts, chopped
2 tablespoons coffee decoction
1 cup fresh cream
1 cup milk powder
1 cup powdered sugar
½ cup cocoa powder
1 cup milk
Method
1. In juicer jar blend together, fresh cream, milk powder, powdered sugar, cocoa powder, milk and coffee decoction.
2. Pour the mixture in an air tight container, sprinkle walnuts from top. Seal the container and keep in the refrigerator over-night to set.
3. Scoop and serve.

???? Nothing Better! MAPLE Walnut Ice CREAM Recipe
A classic Canadian treat! Maple Walnut Ice Cream combines the best sweet maple flavour with the slightly bitter of walnuts.
In this recipe Glen uses super dark late harvest maple syrup, that is packed with deep rich flavour. He then uses evaporated milk which will help boost the creamy mouth feel of a high fat ice cream. This ice cream recipe falls into the realm of frozen custard - the king of ice cream recipes. This is a homemade ice cream recipe that you have to try!
Ingredients:
250 mL (1 cup) dark late season maple syrup
500 mL (2 cups) 35% whipping cream
250 mL (1 cup) evaporated milk
2 mL (½ tsp) salt
5 large eggs yolks
60g (125 mL / ½ cup) chopped walnuts
Method:
Boil syrup in a 2L heavy bottomed pan over medium high heat until reduced to 3/4 cup.
Stir in cream, evaporated milk, and salt and bring to a boil over medium heat.
Whisk eggs in a large bowl, then temper with hot cream in a slow stream, whisking furiously.
Return mixture to the pan, whisking constantly.
Cook over low heat until a thermometer reads 170°, whisking constantly. Do not allow to boil.
Pour custard through a sieve into a bowl, allow to cool stirring occasionally.
Cover and refrigerate until cold.
Freeze in an ice-cream maker until soft-frozen, then add nuts.
Continue until frozen, transfer ice cream to a freezer container, and freeze until firm.
Makes about 1.5 L
