Walnut & chocolate meringue cake ????
???? Ingredients
Walnut meringue:
- walnuts (50g)
- eggs (2 - whites only)
- sugar (50g)
- icing sugar (60g)
Note: Bake at 300F for 20 minutes, then reduce the heat to 180F and bake for another 2.5-3 hours (until fully dry).
Chocolate coating:
- unsweetened dark chocolate (30g)
Whipped cream filling:
- heavy cream (235g - if using gelatin, then split into two portions of 35g and 200g)
- sugar (2 tsp)
- [optional] gelatin (1/2 tsp)
- [optional] cocoa powder for dusting on top
[Optional] Cake mold instructions:
1. Cut out three strips of parchment paper (around 16.5 inches by 2 inches)
2. Fold each strip into half to form 16.5 inch x 1 inch rectangles (shown at 0:18 of video).
3. On one side, cut out a thin ~2cm long rectangle (shown at 0:25 of video)
4. On both sides of each strip, cut a ~1cm long vertical slit (shown at 0:34 of video).
5. Wrap the strip around a rolling pin or a round surface to make it easier to shape into a circle (shown at 0:38 of video).
6. Slide the ~2cm long rectangle into the vertical slit on the opposite end of the strip, then fold it back and slide it into the second vertical slit to secure it in place (shown at 0:46 of video).
The circles should be around 5 inches in diameter.

⬇️⬇️⬇️ Ingredients ⬇️⬇️⬇️
150g of All Purpose flour (about 1 1/4 cups)
1 tsp baking powder
150g softened butter (about 3/4 cup)
150g icing sugar (about 1 1/2 cups)
5 egg yolks
1. Mix all the above ingredients together
2. Butter the sides and line the bottom
of a 9 x 13” baking pan with parchment paper
3. Place the dough into the baking pan cover it with Saran Wrap and firmly press down into the pan to flatten. The Saran wrap is used to help flatten the dough without it sticking to your hands. Finish by using a small rolling pin or a drinking glass to make it even. Remove the Saran Wrap.
5. Spread a thin layer of jam. I like using pure strawberry jam.
6. Beat 5 egg egg whites until fluffy slowly add 100g of sugar (about 3/4 cup)
7. Add 100g of ground walnuts (about 3/4 cup)
8. Lastly we add 100g of finely grated milk chocolate (about 3/4 cup)
* pour this mixture on-top
9. Preheat oven to 325. Bake in center oven for 40-45 minutes.
10. Remove and place on to a cookie rack to cool down for a few minutes before cutting them into squares or desired shapes *My mom cuts them into half moon shapes too. Dober Tek

Walnut Caramel Mirror Cake
Walnut Caramel Mirror Cake - an elegant dessert with a caramel mirror glaze perfect for upcoming Easter holiday. Walnut cake at the bottom, followed by a semisweet chocolate layer, caramelized toasted nuts cream and a mascarpone and coffee mousse on top. Everything coated with a caramel mirror glaze and decorated with a chocolate golden flower for o more elegant look.

Ingredients
Makes about 16 servings
Walnut Cake
2 egg whites
Pinch of salt
1/3 cup (70g) sugar
2/3 cup (70g) walnuts, ground
2 tbsp (20g) all-purpose flour
Chocolate Layer
5.5 oz (150g) semisweet chocolate
3 tbsp (45ml) whipping cream
Walnut Caramel Layer
1/3 cup (70g) sugar, for caramel
1 tbsp (15ml) water
2/3 cup (70g) walnuts, toasted, cut into smaller peices
5 tbsp (70g) butter
2 egg yolks
3 tbsp (45g) sugar, for mixing with yolks
pinch of salt
Mascarpone Mousse
16 0z (500g) mascarpone, room temperature
2/3 cup (80g) powdered sugar
1 1/2 cup (360g) whipping cream (35% fat), chilled
1 tbsp (10g) gelatin powder
1/4 cup (60ml) cold water
2 tsp (4g) instant coffee
1 tsp (5g) vanilla extract
Caramel Mirror Glaze
1 cup (200g) sugar
1 tbsp (15ml) lemon juice or water
3.5 fl oz (100ml) water
3/4 cup (180g) whipping cream
1/2 tsp (3g) salt
2 tbsp (16g) cornstarch
1 tbsp (15ml) water, for mixing with cornstarch
1 tbsp (10g) gelatin powder
1/4 cup (60ml) cold water, for dissolving gelatin
Chocolate Flower
2.5 oz (70g) semisweet chocolate, for melting
1 oz (30g) semisweet chocolate, for tempering
