Strawberry-Ricotta Scones
Makes 8
12 ounces ripe strawberries, hulled and very coarsely chopped
2⅔ cups (345g) cake flour, plus more for rolling
¼ cup (50g) granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 stick (113g) butter, cut into ½ inch pieces, chilled
¾ cup whole milk ricotta cheese, strained in the refrigerator for at least 2 hours
1 cup (240g) buttermilk, chilled, divided
Demerara sugar, for sprinkling

Double Chocolate Scones - rich and chocolaty, quick to prepare, with a rustic, unpretentious look but smells and tastes absolutely amazing.

Ingredients
Makes about 8 servings
1 3/4 cups (220g) all-purpose flour
1/2 cup (60g) unsweetened cocoa powder
1/2 cup (100g) sugar
2 1/2 tsp (10g) baking powder
1/2 tsp (1g) instant coffee
1/2 tsp (2g) salt
6 tbsp (80g) butter, cold and cut into cubes
1 egg
3/4 cup (180g) buttermilk
4 oz (120g) semisweet chocolate chips/chunks
Topping
1 egg, beaten

1. Preheat the oven to 400 F (200C). Line a baking sheet with parchment paper.
2. In a large bowl whisk the flour with sugar, cocoa powder,instant coffee, baking powder and salt.
3. Add the butter cubes, and using a pastry cutter or fork cut the butter until the pieces are no bigger than peas.
4. Add chocolate and toss until are coated in flour mixture.
5. Combine egg with buttermilk and add over the flour mixture and stir until just combined.
6. Transfer dough onto a floured surface. Shape into a circle of about 8 inch (20 cm) in diameter, then cut into 8 triangles.
7. Transfer the scones on the baking sheet and brush with egg. Top with more chocolate chips or chunks.
8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean or with a few crumbs attached. Transfer to cooling rack to cool slightly. The scones are best served warm. Enjoy.

SCONES:
• 2 cups all-purpose flour
• 1/3 cup sugar
• 1 tablespoon baking powder
• 1/4 teaspoon salt
• 1/2 cup cold butter
• 1 large egg (optional)
• 1 cup heavy cream
FLAVORING AND FINISHING:
• 1 cup fresh blueberries
• 1 teaspoon vanilla extract
• 2 tablespoons heavy cream optional
✅Instructions
1️⃣ 00:00:13 - In a large mixing bowl, stir together flour, sugar, baking powder, and salt.
2️⃣ 00:00:30 - Grate your butter using a cheese grater and stir into the flour mixture OR cut butter into small pieces and use a pastry cutter to cut the fat into the flour mixture until it resembles coarse meal or sand.
3️⃣ 00:01:11 - Add in egg (if using), 1 cup cream, blueberries, and vanilla extract (or other flavorings) stirring until the dough just comes together.
4️⃣ 00:01:54 - Turn the dough out onto a clean countertop and form it into a ball.
5️⃣ 00:02:09 - Press the dough flat until it is 2-inch thick circle. Use a butter knife to cut the circle into 8 wedges.
6️⃣ 00:02:18 - Place cut scones on an un-greased baking sheet and brush the tops with 2 tablespoons heavy cream.
7️⃣ 00:02:27 - Bake at 425 degrees for about 12-15 minutes, until the tops are nicely browned.
