How To make Chocolate Potato Cake
1/2 lb Potatoes; peeled
1/2 c Milk
2 c Flour, all-purpose; sifted
2 ts Baking powder
1/2 ts Salt
1 c Shortening
2 c Sugar
4 Eggs
1 ts Vanilla extract
1 1/2 oz Chocolate, unsweetened; melt
Whipped cream Chocolate frosting; * see no
chocolate frosting recipe to finish the cake. Cook potatoes in small amount of boiling water until tender. Drain well and shake pan over low heat to dry potatoes thoroughly. Force hot potatoes through a sieve or ricer. Combine 1 cup of the potatotes with milk; set aside. Sift flour, baking powder and salt together. Cream shortening; beat in sugar gradually until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in vanilla and melted chocolate. Add dry ingredients in 4 parts and potato mixture in 3 parts alternately to creamed mixture. Beat only until smooth after each addition. Spread batter in 2 greased and waxed paper-lined 9-inch cake pans. Bake in preheated 350 degree oven for 45 minutes or until cake tests done. Remove from oven and let stand in pans for 10 minutes. Remove from pans and cool. Fill with whipped cream and frost with chocolate frosting. -----

---CAKE---
1/2 cup salted butter
1 cup sugar
2 eggs
1/2 cup whole milk
1/2 cup riced/mashed russet potato
1 cup flour
2 teaspoons baking powder
1/2 teaspoon each of: cinnamon, cloves, nutmeg
1/2 cup GRATED semi-sweet chocolate (2oz, or half a baking-chocolate bar)
1/2 cup chopped nuts (I recommend walnuts)
--- FROSTING ---
2 tablespoons salted butter
1 cup sugar
1/4 cup whole milk
2 oz semi sweet chocolate
1/2 teaspoon vanilla extract
- Instructions | CAKE:
1.) Set diced potato to a boil until tender. I do not peel the potato.
2.) Cream together butter & sugar until fluffy and pale.
3.) Slowly incorporate the eggs, which have been beaten.
4.) Rice or mash potato in a separate bowl, then stir and cool with milk.
5.) Incorporate the potato & milk, mixing well.
6.) Combine flour, leavening & spices in a separate bowl.
7.) Gently incorporate the flour mixture, grated chocolate & nuts.
8.) Add batter to a buttered and floured 8x8 inch cake tin.
9.) Bake at 350 fahrenheit for 45-55 minutes.
* Check at 40 minutes with a toothpick.
* When inserted into centre then pulls away clean - the cake is done.
- Instructions | FROSTING:
1.) Add all ingredients; save for vanilla, to a saucepan.
2.) Set to a LOW boil for 15 minutes, stirring occasionally at first. Remove from heat.
3.) Add vanilla, and beat to desired consistency.
4.) Apply frosting to the cooled cake.
* Beating more will lead to a spreadable frosting - less so will lead to a thick, pourable glaze which will set wonderfully once cool.
* Briefly chilling the boiled frosting will help to thicken, just stir before application.

It's Friday - the sweetest day of the week, and you can't end a week of dinners without dessert, SO: our last recipe for Potato Week is the one, the only, Chocolate Idaho Potato Cake.
This chocolate cake is a spin on a sponge cake, but the potatoes add in tons of moisture and extra fluffliness to the batter, so you end up with a light-as-air chocolate cake with just enough fudginess to taste superbly luxurious.
Edward and I love food - all of it. We respect and honor all of the hardworking chefs and kitchen crews out there, especially right now as they stand on the front lines of a global tragedy to ensure there is good food keeping people alive. However, we are always reminded that all people deserve to eat, and deserve to eat well. A person's budget should not dictate their ability to eat beautiful food anywhere they are, and the potato is available to every person of every budget.
The potato has a long history with both hardship and celebration, just like human history. Just like each of us. But with the right friends, and a little bit of time, it can become something absolutely incredible.
