Easy Dark Chocolate Peanut Butter Cups Recipe | The Sweetest Journey
Learn how to make this easy and quick snack of peanut butter cups covered in dark chocolate and topped with almonds. ????????
Ingredients:
3/4 Cup Dark Chocolate Chunks (80g) I used 72% cacao
1/4 Cup Peanut Butter** (64g) I used Natural & Unsweetened
Chopped Almonds or Other Nuts/Seeds
**If you are using natural peanut butter like I am, stir into it 1/2 teaspoon of melted coconut oil, then refrigerate until the peanut butter solidifies before using in the cups.
Directions:
1. Melt the chocolate in a double boiler or in the microwave at 20 second intervals (stirring after each) until smooth. Spoon about 1 or 2 teaspoons of chocolate into a cupcake paper liner. Swirl the chocolate so that it completely covers the bottom and about 1/4 inch up the sides. Freeze for 10 minutes or until chocolate is set.
2. Spoon peanut butter into each chocolate cup, filling the bottom but leaving the chocolate edge uncovered. Top with melted chocolate. Spread the melted chocolate out carefully to cover all of the peanut butter and to meet the edge of the chocolate that is already set. Top with chopped almonds. Freeze cups for 20 minutes or until set. Store in the refrigerator.
| Makes about 6 cups.
