This is the No Music and No Talk version of my Coffee Cake Recipe or Streusel Cake. I hope you will enjoy this ASMR Cooking version of the video.
Coffee Cake is that kind of comfort dessert you make to serve with your morning espresso or afternoon latte. In this video, I'm showing you my version of the Old Fashioned Streusel Cake.
The funny thing about the Coffee Cake is that it doesn't contain any coffee at all, but it's a super flavored cinnamon butter cake with a crumbly streusel top.
Back in the 17th century, in Europe, a new custom was born: enjoy a delicious piece of cake when drinking coffee. Then the Coffee Cake changed many times, but the cinnamon Coffee Cake is already a statement for cake lovers. Its particularity is the streusel, the typical crumbly topping obtained with flour, cinnamon, sugar, and butter.
Here's my version of Cinnamon Coffee Cake!
Ingredients:
Cinnamon layer:
brown sugar 140g.
flour 30g.
cinnamon 2 teaspoons
Streusel (crumbly topping)
flour 65g
brown sugar 60g
cinnamon powder 2 teaspoons
a pinch of salt
cold butter (diced) 55g.
Butter Cake
butter (softened)
sugar 220g
3 eggs
vanilla extract 1 teaspoon
Greek yogurt 240ml.
flour 270g
baking powder 2 teaspoons
baking soda 1 teaspoon
a pinch of salt
corn starch 2 teaspoons
Instructions:
1. In a small bowl, mix the cinnamon layer ingredients and set them aside.
2. In a larger bowl, add the streusel dry ingredients (flour, cinnamon, salt, and sugar), then add the cold diced butter. Crumb the butter until you obtain a wet sand texture of your streusel. Place the bowl in the fridge.
3. Using a stand mixer or a normal hand mixer, mix whisk the softened butter with sugar until you get a creamy texture.
4. Add vanilla extract, then the eggs, one at a time. Continue to whisk for a minute after each egg is added.
5. In a separate bowl, combine the flour with baking powder, baking soda, salt, and corn starch. Then combine the flour mix with the batter, a bit at a time.
6. Before adding the last parts of the flour mix, add the greek yogurt and mix. Then continue with the flour.
7. Once ready, in a rectangular or springform tin, pour half of the batter quantity and spread it uniformly. Add the cinnamon layer, then the last half of the cake batter.
8. Take the streusel of the fridge, crumb it with your fingers and place it on the top of the cake.
9. Bake the coffee cake in the preheated oven at 175°C for 50 minutes.
10. Let the cake cool for about 30 minutes before cutting and serving it.
11. The best way to enjoy your coffee cake/streusel cake is to keep it out of the fridge at least 10 minutes before serving (or slightly warmed in the microwave), of course, next to your favorite coffee beverage.

COFFEE CAKE AND MUFFINS RECIPE
Cinnamon Streusel Topping
1/3 C sugar
1/2 C all-purpose flour
1 tsp cinnamon
4 Tbsp butter cold, in cubes
In a bowl mix the sugar, flour and cinnamon
Add the melted butter and stir, set aside to cool
When you're ready for it break up the topping into crumbly bits
Brown Sugar Filling
1 C light brown sugar packed
1 1/2 Tbsp cinnamon
1/4 tsp nutmeg
3 tsp cocoa powder
1/4 tsp salt
In a small bowl, whisk together the brown sugar, cinnamon, nutmeg, cocoa powder and salt.
Cake Batter
1/2 C butter softened
1 C sugar - 1 Tbsp for high altitude
1/4 C light brown sugar packed
1 tsp vanilla
2 lrg eggs
2 1/2 C flour + 2 1/2 Tbsp for high altitude
1 tsp baking soda - 1/8 tsp for high altitude
1/2 tsp salt
1/2 C sour cream
1 C milk + 2 tsp for high altitude
½ C mini chocolate chips
Preheat oven to 350 degrees (375 for high altitude)
Beat together the butter and sugars until light and fluffy, then beat in the vanilla.
Add the eggs, one at a time, beating for 1 minute after adding each one. Scrape the sides of the bowl as needed.
In a small bowl, whisk together the flour, baking soda, and salt.
In another small bowl, whisk together the milk and sour cream until well combined.
With the mixer on low speed, add ⅓ flour, ½ milk, ⅓ flour, ½ milk and finally the last of the flour
add the mini chocolate chips and do a final stir to incorporate evenly
Assembly and baking 9x13 cake
Preheat oven to 350 degrees (375 for high altitude)
prepare a 9x13 pan with a non stick spray - I prefer Bakers Joy
Spread half of your batter in the bottom of your prepared pan
sprinkle your brown sugar filling on top of the batter.
Dollop the rest of your cake batter on top of your filling, using a spatula to carefully spread the batter across the pan.
Use a butter knife, gently swirl the filling into the batter.
Sprinkle all of the streusel on your cake.
Bake for 50-55 minutes (40-45 for high altitude) - REMEMBER baking depends a lot on your oven - it may take longer - make sure there isn't a jiggle in the center, when you press it it should have a little bounce and will be a deep golden brown and a toothpick will come out clean.
Assembling and baking muffins
Preheat oven to 375 degrees
prepare 24 muffin tins with non stick spray or liners
scoop 1 1/2 Tbsp of batter into each muffin cup
divide the brown sugar filling among the muffins - you don't have to use it all
spoon the rest of the batter (1 1/2 Tbsp) over each muffin and spread to the edges to seal in the sugar mixture
sprinkle the streusel on top of the muffins, press in slightly to help them adhere.
Bake for 17-19 mins and check that they have a little bounce back when pressed

Chocolate Chip Coffee Cake | In The Kitchen with World Wide Campus
Chocolate, coffee and cake. There’re perfect of sweet treats, a brunch or even dessert. In this video, World Wide Campus News & Entertainment show you how to make the delicious chocolate chip coffee cake.
Wet Ingredients:
1 stick of Unsalted Butter, room temperature
¾ cup of Granulated Sugar
2 jumbo Eggs
1 teaspoon of Pure Vanilla Extract
Dry Ingredients:
2 cups of All Purpose Flour
½ teaspoon of Baking Soda
1 teaspoon of Baking Powder
¼ teaspoon of Salt
Alternate with 1 cup of Whole Milk
1 cup of Semi Sweet Chocolate Chips
Streusel Topping:
1 cup of All Purpose Flour
½ cup of Firmly Packed Light Brown Sugar
1 stick of Unsalted Butter, room temperature
In a medium bowl, combine the flour, then the sugar, and break it over using with the spoon, fork, or a wire whisk. Cut in the butter to the flour and sugar mixture until resembled coarse crumbs.
Sprinkle with 1 cup of Remaining Semi Sweet Chocolate Chips
Powdered Sugar Glaze:
1 cup of Powdered Sugar
3 tablespoons of Whole Milk
¼ teaspoon of Pure Vanilla Extract
Combine three of the ingredients in a small bowl.
Combine butter, and sugar, and blend it in until light and fluffy. Add the eggs one at a time. Add in vanilla. Combine flour, baking soda, baking powder, and salt, stir it together. Add the dry ingredients alternating with milk, and mix everything really well. Gradually add in 1 cup of chocolate chips, and fold it in. Pour the batter into slightly greased 9 by 13 inch baking pan. Sprinkle with streusel topping on top, and sprinkle with 1 cup of remaining chocolate chips on top. Bake it at 25 minutes in preheated oven for 350°F. After its baked for 25 minutes, take it out of the oven, put it on the cooling rack, and let cool completely. Once the cake is cooled, drizzle the glaze on top of the cake.
This Chocolate Chip Coffee Cake is the best, and it's very delicious.

Sugar (granulated) : 200 g
Eggs (room temperature) : 3
Cake Flour: 280g
Baking Powder: 2 ½ TSP
Salt: ¼ TSP
Vanilla: 1 TSP
Sour Cream/ Yogurt: 245g
➡️For Filling:
Light Brown Sugar: 90 g
Dark Brown Sugar: 90 g
Cinnamon Powder: 2 TSP
Walnuts: 1 Cup
Raisins: ½ Cup
➡️For Streusel Topping:
Self-raising Flour: 80g
Brown Sugar: 80 g
Cinnamon Powder: 1 TSP
Butter (melted): 60 g
