How To make Banana Chip Streusel Loaf
1/2 c firmly packed brown sugar
1/3 c margarine
softened
1/2 c egg substitute
1 tsp vanilla
2 med ripe bananas :
mashed
1 1/2 c all-purpose flour
1/2 c Cream of Wheat
1 tbsp baking powder
Streusel Topping: 1 tbsp Cream of Wheat
1 tbsp sugar
1 tbsp all-purpose flour
1 tbsp margarine
1/2 tsp ground cinnamon
1/4 c miniature chocolate chips
In large bowl, with electric mixer at medium speed, beat sugar and margarine until creamy. Mix in egg substitute and vanilla. Beat in banana until almost smooth. Combine flour, cereal and baking powder; stir into banana mixture just until moistened. Spread batter into greased and floured 8 1/2x4 1/2x2 1/2-inch loaf pan; sprinkle with Streusel Topping. Bake at 350

Bake at 450F for 10 minutes; reduce oven temp to 325F, and bake for another 15 minutes or until almost firm.

Makes 12 jumbo or 18 regular muffins
Prep Time: 15 minutes
Cook Time: 30 minutes for jumbo, 20 minutes for regular muffins
Ingredients
Crunchy Streusel
½ cup (75 g) all-purpose flour
1/3 cup (70 g) granulated sugar
½ tsp ground cinnamon
¼ cup (60 g) unsalted butter, melted
Muffins
2 large, very ripe bananas
½ cup (115 g) unsalted butter, melted (still warm is OK)
½ cup (100 g) granulated sugar
½ cup (100 g) packed light brown sugar
2 large eggs
1 tsp vanilla extract
½ cup (125 mL) buttermilk
1 2/3 cups (250 g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp fine salt
1. Preheat the oven to 375°F (190°C). Line one 12-cup muffin tin with XL tulip paper liners or 2 pans with 18 regular liners.
2. For the crunchy streusel, stir the flour, sugar and cinnamon together in a small dish. Stir in the melted butter – the mixture may seem paste-like at first, but as it sits it will become crumbly.
3. Mash the bananas well in a large mixing bowl. Whisk in the melted butter, granulated sugar and brown sugar. Whisk in the eggs and the vanilla, followed by the buttermilk. Sift in the flour, baking powder, baking soda and salt and whisk just until smooth.
4. Scoop the batter into the muffin tins and crumble the streusel on top of each muffin. Bake for about 20 minutes for regular muffins and 30 minutes for the XL muffins. Cool the muffins for 10 minutes in the tin before removing to a rack to cool completely.
The muffins will keep for up to 3 days in an airtight container.

Banana Bread with Chocolate Chip Streusel
This is the only recipe I use for banana bread. The streusel changes this into something amazing. Be careful to not over cook so the bread isn't dry.
Banana Bread with Chocolate Chip Streusel
Ingredients
2/3 cups semisweet chocolate chips
1/2 cup light brown sugar
1/4 cup chopped walnuts
1 tablespoon ground cinnamon
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated white sugar
1 stick unsalted butter, room temperature
1 large egg
3 very ripe mashed bananas
3 tablespoons milk
Instructions
Preheat oven to 350°F. Spray a 9×5-inch metal loaf pan or 3 6x3 inch pans.
For streusel - stir chocolate chips, brown sugar, and walnuts together in a small bowl. Set aside.
Mix all purpose flour, baking soda, baking powder, cinnamon, and salt into medium bowl.
Beat sugar, butter, and egg in large bowl until fluffy. Beat in mashed bananas and milk. Add dry ingredients and blend well.
Spread half of batter in loaf pan. Sprinkle with half of streusel. Repeat with remaining batter and streusel.
Bake until tester inserted into center comes out clean, about 50 minutes if using a 9 inch pan. If using the small loaf pans it's closer to 40 to 45 minutes. Cool loaf in pan on rack.
Number of servings (yield): 12
