3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Chilli con carne, simple and delicious recipe from scratch! Delicious and spicy dinner or lunch
Ingredients: 4 servings
500 g beef mince
400 g can of of beans
400 g can of of tomatoes
200 ml red wine
200 ml chicken broth
salt
pepper
cumin
chili powder
piece of chocolate
fresh bread
Saute onion in oil, add the garlic after a minute, then add the minced meat, along fry 5 minutes, add the tomatoes, broth, wine, season with salt, pepper, chilli and cumin. Cover the pot and cook for about 60 minutes. Finally, add the beans and a piece of chocolate and cook another 20 minutes. Serve with fresh bread.

British chilli con carne | how to make chili con carne
Chille con carne is a 'not so classic' British recipe. By no means is this a classic Mexican mole chilli recipe. This is a British chilli con carne, and it's just as good. The key thing to a good chilli con carne, is a lot of little steps done well. By that I mean, you take some care with it. You can't just bung a load of frozen mince in a pan with some onion and chilli powder, and expect it to turn out magnificent, because it won't.
My recipe uses a little bit of dark chocolate. This does two things, it adds richness, but also sweetness, which is important for any mole style chilli. I also realise that we spell 'chilli' differently to you folks in the US who spell it 'chili' and that is fine of course, but I thought i'd mention it, just in case there was any confusion.

To make my Chilli con carne you will need
►500g of beef mince
►1 red bell pepper
►1 large onion
►2 fat garlic cloves
►1 tsp of ground cumin
►1 + 1/2 tsp of smoked paprika
►About 400ml of good beef stock
►1 x 400g can of chopped tomatoes
►1 x 400g can of drained red kidney beans
►A couple of pieces of dark chocolate
►1 tsp of dried oregano
►1-2 red chillies
►2 tbsp or tomato puree (tomato paste in U.S)
►Coriander for garnish
►Salt
