The Best Campfire Chili Ever! It's a Texas Thing
My own special recipe. How I make Texas chili over a campfire.
Recipe:
1 lb lean ground beef
1 lb Jimi Dean Breakfast sausage (Venison even better!)
1 can Diced Fire Roasted Tomatoes (important!)
1 can chopped Green Chilis
1 8oz can Tomato Sauce
1 8oz can of water
1 medium Vidalia onion or 4 - 5 Green Onions
3-4 cloves Garlic
5 1/2 tbsp Chili Powder
1 tsp Red Pepper
2 tsp Cumin
2 tsp Salt
2 tsp Oregano
1 tbsp. Paprika
1 cup of Brewed Coffee
2 pieces cooked Bacon
3 tbsp Corn Mesa Flour or Pancake Mix
Oil Dutch Oven, add Onion and Garlic to sauté
Brown meat
Add seasonings
Add Fire roasted Tomatoes
Add green chilis
Add tomato sauce with 1 can water
Add cup of coffee
Add bacon crumbled
Stir and Simmer for 3 hours
Last 30 minutes mix masa flour or pancake mix with warm water to oatmeal consistency and add
Serve with cheese and crackers
You can spice it up more with Jalapeños but please don't add beans! (It's a Texas thing)

The Best Campfire Chilli Recipe Ever!! | Life is Better Exploring | S1 E1
In this episode we feature the Best Campfire Chilli Recipe Ever or at least we think it is. The key is to get the fire built large enough to get a really good bed of coals. Once you do that, it's time to starting cooking.
When cooking over the campfire, we use Cabela's Cast Iron Dutch Oven 10 inch (25cm). It has a flat bottom which helps keep the heat spread out evenly and cooks really nicely. We also make sure pot is well seasoned before we cook with it to keep food from burning to the bottom.
Here's what you'll need for the recipe.
1 pack of ground turkey, ground beef, or veggie mix
4 cans of tomato soup
1 can of black beans or kidney beans (personal preference)
1 can of peaches and cream corn
1 package of taco seasoning
1-2 tablespoons of brown sugar (or brown sugar replacement)
add hot peppers or cayenne pepper to bring up the spiciness as required.
First, place the pot over the stove to bring it up to temperature before adding any meat. Once it's up to temperature, add the meat and brown. This will likely take less than 5 minutes if there is a really good bed of coals. Make sure mix up the meat well so it doesn't burn.
Once the meat is ready, add the 4 cans of tomato soup and stir it in. Mix in the taco seasoning, can of black beans, can of corn, and brown sugar. Mix well, and put the lid on the pot, and let simmer over the fire for 30-45 minutes. (you can add other spices to bring up the heat as needed) Keep checking and stirring every few minutes to ensure nothing sticks to the bottom.
The chilli will bubble quite a bit, so if you find the fire is a bit too hot, pull the pot over to one side where there are less coals if needed. Once the chilli is cooked, serve in a bowl, crumble cheese on top and serve. We usually have some nice bread with it, or add a salad on the side. Either way, it's a great, hardy meal for those cold days, or after a long hike. All that's left for you to do is sit down and enjoy!
This recipe will make enough for 4 people, or if there's only 2 of you, keep for the next days as left over, or make campfire nachos... that recipe will be coming in a few episodes.Welcome to our channel Life is Better Exploring.
