1/2 c Fresh red or green chillies 1/2 c Chopped fresh mint 1 tb Lime or lemon juice 1 ts Chopped fresh ginger Salt Wash and dry the chillies. Cut off the stalks and chop. Mix all the ingredients together about 15 minutes before serving. Warning this one is for fire eaters only!!!

Mango Chutney
Ingredients:
5 Mangoes (pealed and small diced) 2 Cups Sugar 1 Cup White Distilled Vinegar (5% acidity) 1 Tbsp Ginger (minced) 2 Garlic Cloves (minced) 1-2 Tbsp Vegetable Oil 2 Red Chili’s 1 Tsp Mustard Seeds 1/2 Tsp Turmeric 1/2 Tsp Coriander 1/2 Tsp Cumin 1/2 Tsp Cinnamon 1/4 Tsp Clove Salt
*In a large pot on medium/low heat, add oil, garlic, ginger, and chilis. Sauté until fragrant.
*Add ground spices and cook until fragrant.
*Next add mangoes, sugar, vinegar, and salt to taste.
*Simmer for 1.5 hours until reduced and thickened.
NOTE: If the mango chunks are too big, you can use a potato masher and make them smaller.
*Store in a jar and refrigerate. Serve with any protein as a glaze, bread, cheese, or spread on toast etc…
