This is a great idea for a dinner meal :) Chicken with Spinach and Cheese in Puff Pastry ???? It's quite fast and easy to make. You can add more salt to taste if you want ;)

Ingredients: 2 chicken breasts sheet of puff pastry mix of spices for Mexican dishes cheese or mozarella chopped spinach salt

Chicken Florentine
Ingredients:
2 8oz chicken breasts 2/3 cup milk or cream 1/3 cup chicken broth 1/4 cup Marsala wine 4 oz mushrooms chopped 1 cup spinach chopped 2.5 oz sun dried tomatoes in olive oil 2 tbsp and Parmigiano cheese 2 tbsp olive oil 1 tbsp and 1 tsp butter 1 tbsp flour 1 clove garlic ½ tsp salt ½ tsp pepper
Instructions: Melt the butter over low heat in a small pan. Add the flour and stir into a smooth roux. Remove roux from heat and set aside. Season the chicken cutlets with salt and pepper. Add the olive oil to a large pan and cook the chicken cutlets over medium high heat for 4-6 minutes on each side turning once. Set the chicken aside and wrap in foil. Add the chopped mushrooms to the pan and sauté until soft. Add the spinach and garlic and continue to cook until the spinach starts to wilt. Add the Marsala wine, the chicken broth and the milk or cream to the pan and stir. Stir the roux into the mixture and continue to cook over low heat until it thickens. Add the sundried tomatoes and return the chicken breasts to the pan. Sprinkle the grated Parmigiano cheese over the dish and serve.
