Recipe Notes -
Like all my recipes, if any contain alcohol there are always substitutes. For this recipe, the red wine can be substituted with beef stock. There is beef stock already in this recipe but don’t use less due to the fact that it’s being swapped, the initial addition is to deglaze the pan and create a base foundation.

Dried Beef Casserole
Here's a great recipe that uses dried beef. It can easily be made from food storage. You can cook the noodles, mix the ingredients together and bake this on the spot or you can mix the ingredients with dry noodles, refrigerate for 3 or 4 hours or even overnight then bake. It has a salty, smoky taste. This is from Lancaster County's Amish Cookbook which I bought online from Kauffman's Fruit Farm & Market. I think it was about $13. It is written old style, many of the recipes are a list of ingredients and minimal instructions. Because of this they were able to fit over 1000 recipes in this book. This is a great cookbook for preppers to have. It has simple recipes for nearly all the basic foods and many of the recipes are easily adaptable to food storage.
Dried Beef Casserole
1 cup uncooked macaroni
1 can cream of mushroom soup
1 1/2 cups milk
3 tsp. finely chopped onion
1 cup frozen peas
1/4 lb. dried beef (I used a 2.25 oz. jar)
1 cup grated cheese
Mix all ingredients together. Put into a greased casserole. Let sit overnight or at least 3 to 4 hours. Add 3/4 cup of water. Bake at 350 for 1 hour uncovered.
You could also cook the noodles and cut back the milk to 1 cup then bake right away. Don't add any water if you do it this way.
