For the dressing:
1/4 cup (60ml) Olive oil
2 tablespoons Lemon juice
1 tablespoon White/Red wine vinegar
1/2 teaspoon Dijon mustard
Salt to taste
Pepper to taste
For the salad:
1 batch Kale, stems removed
2 tablespoons Chopped almonds
2 tablespoons Chopped pecans
1/4 cup Cranberries
1 Avocado, cut into cubes
Directions:
1. Make the dressing: in a small bowl whisk olive oil. Vinegar, lemon juice, Dijon mustard, salt and pepper. Whisk until smooth.
2. Remove kale stems, as shown in the video. Then, thinly slice the kale and place in the bowl.
3. Pour half of the dressing to the bowl with the kale leaves. Using your hands, massage the leaves until they become soft and wilted.
4. Add chopped almonds, pecans, cranberries, avocado. Add the rest of the dressing and toss to combine
5. Serve.

Ingredients for Cranberry Chicken Salad with Apples
Chicken – cubed or shredded. You can use leftover chicken or Instant Pot Shredded Chicken. We show you how to make the perfect chicken breast in this post. A store-bought, rotisserie chicken works great, too! Substitute the chicken with turkey if you wish.
Bacon – cooked to a crisp and crumbled or roughly chopped. If making this recipe Whole 30, you’ll want to use a no added sugar bacon such as Applegate.
Small apple – any variety of apple will work.
Celery – adds a nice crunch to the chicken salad.
Red onion – may substitute yellow onion.
Pecans – toasted pecans really make this recipe extra delicious, however, if you’d like to substitute walnuts or sunflower seeds (for nut-free) that is an option. Below you’ll find how to toast pecans.
Dried cranberries – may substitute dried cherries or raisins. For Whole 30, you’ll want to use a dried fruit that has no added sugars such as Made In Nature dried fruits.
Fresh rosemary – may substitute dried rosemary.
Mayonnaise – creamy, delicious avocado mayo!

This pan-fried chicken that will enchant everyone with delicious aromatic flavours!
Ingredients:
• 2 chicken breast fillets, cut into small pieces
• 1 small onion, sliced
• 1 courgette, cut into cubes
• 30 g olive oil
• 1 apple, cut into small pieces
• 50 ml red wine
• 200 g chicken broth
• Salt, thyme, black pepper
• 12 dried apricots
• 50g cranberries
Method:
1. Heat the olive oil in a deep pan with a thick base. On high heat, brown the chicken pieces for 2-3 min on each side.
2. Add onion and sauté for 2-3 min. Add apple pieces, courgette and sauté for 2 min; then add dried fruits. Season with salt, pepper and thyme.
3. Add red wine and let it evaporate, then chicken broth, cover and simmer for 15 min on a medium heat.
4. Serve and Enjoy! ????

Chicken (You can use whatever kind you'd like)
8oz bottle of Italian dressing
1 can whole berry cranberry sauce
1 envelope onion soup mix (I make my own rather than store bought using this recipe:
Directions:
1. Season chicken with salt and pepper to taste
2. Combine all ingredients in a bowl and mix well
3. Add chicken to the bowl
4. Marinate chicken, if desired for about 30 mins
5. Pour entire bowl of chicken and mixture into a baking dish or pan
6. Bake for about 30 minutes (if boneless, skinless chicken breast) or until fully cooked
Enjoy over rice, couscous or whatever else you like!
