Sauce Diable – Brown Devil Sauce
Sauce diable or brown devil sauce is a thin brown veal stock-based sauce. It is a light sauce with great aromatic flavors with shallots, parsley, and peppercorns. It is a delicate sauce that has a bit of a punch when you bite into a peppercorn It is typically put on chicken. However, it is also good on sautéed, grilled or broiled - pork, veal, or lamb. This video will show you how to make the sauce diable.
Ingredients:
- 78ml or 1/3 cup of white wine
- 50g or 3 small shallots chopped finely
- 8 peppercorns - crushed
- 237ml or 1 cup of thin brown sauce – video link on how to make this sauce:
- 1 tsp Worcestershire sauce
- 1/2 tsp parsley

Deviled Chicken Wings Recipe | Halloween Recipe
I'm sharing with you a homemade chicken wing recipe for these spicy chicken wings. These hot wings are very similar to buffalo chicken chicken wings but they also have a sticky sweetness to them which helps tame down the spice.
This a great grilled chicken wing recipe / baked chicken wing recipe or chicken wings in the oven recipe. The chicken wings are cooked in a dry rub which means you don't need a chicken wing marinade. Then they are coated in a spicy buffalo sauce.

DEVILED CHICKEN WINGS RECIPE
Ingredients
10 Chicken Wings
2 tsp Brown Sugar
2 tsp Baking Powder
½ tsp Chili Powder
1 tsp Paprika
1 tsp Cumin
1 tsp Garlic Powder
½ tsp Salt
½ tsp Pepper
⅓ Cup Hot Sauce
2 Tbsp Honey
2 Tbsp Butter
Instructions
Pat the chicken wings dry with a paper towel and place into a large bowl.
Measure out the brown sugar, baking powder, chili powder, paprika, cumin, garlic powder, salt and pepper into a small bowl and mix until well combined.
Pour the dry rub over the chicken wings and toss until well coated.
Place the chicken wings on a baking sheet topped with a rack in a single layer and bake in a 200C | 400F oven for 40-50 mins or until cooked through and well browned.
When the wings are just about ready make the sauce by pouring the hot sauce, honey, and butter into a small saucepan. Heat over medium heat, stirring occasionally until melted.
Turn the heat to low and simmer for about 5 minutes until thickened.
Remove the chicken wings from the oven and transfer to a bowl. Pour over the sticky sauce and toss until the wings are generously coated.
Serve immediately with a dipping sauce like ranch to cool down the spice.
Notes
If you would like to make more just double or triple this recipe.
If you don't want too much spice omit the chili powder and just use a smaller amount.
Use your favourite hot sauce or use a more milder sauce for less heat.

This buffalo wings recipe is a Pinoy version because it uses banana ketchup, calamansi juice instead of lemon juice but you can use lemon juice as an alternative.

The original taste of buffalo chicken wings is not sweet and taste more of hot sauce with butter. This this version I'm sure you are going to love the taste sweet and spicy with buttery taste.
Buffalo Chicken Wings Ingredients
800 grams chicken wings, slice in two pieces each
1 tsp. Magic Sarap or any granuled seasoning
1/2 tsp. salt
1/2 tsp. pepper
1 Tbsp. calamansi juice (for fried chicken marinade)
3 cups cooking oil for frying
Cornstarch for coating the chicken
For the sauce:
3 cloves garlic, minced
1/4 cup butter or margarine
1/4 cup hot sauce (reduce to 1/8 cup if too spicy)
1/2 cup banana ketchup
1 Tbsp. calamansi juice (for the sauce)
