How To make Chicken Chowed with Black Beans
3 lb Chicken, hacked into
2" pieces
MARINADE:
2 T Light soy sauce
2 T Cornstarch
1 ea Egg white
1 t Salt
2 T Peanut oil
ADDITIONAL:
4 T Peanut oil
3 ea Cloves garlic, chopped fine
1 ea Yellow onion, peeled and
-cut into 1" pieces 3 T Fermented black beans (dow
-see) rinsed in plain water -and mashed with 2 T Dry sherry
2 ea Green sweet bell peppers
-cored and cut julienne FINAL SAUCE:
1 T Light soy sauce
2 T Dry sherry
1 c Chicken stock
1 t Brown sugar
Cut the chicken and soak in the marinade for 15 minutes. Heat a wok and add 2 T of the oil. Drain the marinade from the chicken and reserve. Brown the chicken pieces well in the wok, then remove and set aside. Drain the oil from the wok and discard. Heat the wok again and add the remaining 2 T oil. Chow the garlic for a moment and add the onions and the dow see mashed with the sherry. Chow for a moment and add the green peppers. Return the chicken to the wok along with the reserved marinade. Add the ingredients for the final sauce. Stir well and cover. Simmer the dish until the chicken is tender but not overcooked, about 20 minutes.

****Black pepper Chicken recipe****
*Chicken breast : 200 gram
(Thin slice cutting)
For marination
*Salt: 1/4 tsp
*sugar: 1/4 tsp
*Egg white : 1
*cornflour : 1.5 tbsp
Mix well and fry for 3 minutes
(Frying oil temperature 160 to 170)
*Vegetables
*Onion: 45 gram
*green chilli: 30 gram
*dried red chilli: 5 pcs
*capsicum: 50 gram
*Slurry
*Cornflour: 1tbsp
*water: 3tbsp
For black pepper sauce
*Oil : 2tbsp
*chopped garlic: 1tbsp
*water : 230ml
*salt : 1/4 tsp
*chicken powder: 1 tsp
*Mama sita's oyster sauce: 1tbsp
*soy sauce: 1tbsp
*Ground black pepper: 1/2 tsp
• Sesame oil: 1tsp

Tastiest Chicken With Salted Black Bean
Ingredients :
400gm chicken breast meat
1 big onion
Chilli
2 cloves garlic
1 tbsp salted black beans
1 tbsp oysters sauce
1 tbsp dark soya sauce
1/3 tsp salt
羅定豆豉雞 Luoding Fermented Black Bean Chicken #經典手工粵菜 **字幕 CC Eng. Sub**
????材料:
雞 1隻
紅蔥頭 6粒
豆豉 30克
蒜頭 5瓣
薑 15克
蔥 適量
豉油 1湯匙
紹酒 1湯匙
油 1湯匙
鹽 1茶匙
糖 1茶匙
生粉/澱粉1茶匙
胡椒粉 少許
麻油 適量
????步驟:
1️⃣ 雞洗淨切件,加入1茶匙鹽,少許胡椒粉和1茶匙生粉(澱粉/粟粉),1湯匙油拌勻。
2️⃣ 紅蔥頭,蒜頭切粒,豆豉洗淨備用。
3️⃣ 雞肉走油(炸一下),微黃取出。熱鍋下油,放入紅蔥頭、薑、蒜頭、豆豉爆香。加入雞肉翻炒至完全熟透。
4️⃣ 加入1茶匙糖,1湯匙豉油,1湯匙紹酒和適量麻油翻炒均勻,撒上蔥花出鍋即可出鍋。
????備注:羅定豆豉是廣東省羅定市特產,該豆豉保留着傳統的蒸煮、發酵、沖洗、晾曬、和味等制作工序,產品以豉香濃郁、味道鮮美聞名於世。

Shallots - 6 bulbs
Fermented black beans - 30g
Garlic - 5 cloves
Ginger - 15g
Spring onions, as needed
Soy sauce - 1 tablespoon
Shaoxing wine - 1 tablespoon
Oil - 1 tablespoon
Salt - 1 teaspoon
Sugar - 1 teaspoon
Cornstarch - 1 teaspoon
White pepper powder, a pinch
Sesame oil, as needed
????Cooking Directions:
1️⃣ Wash the chicken and cut into pieces. Add 1 tsp salt, a pinch of white pepper powder, and 1 tsp cornstarch. Mix well with 1 tbsp of oil.
2️⃣ Dice the shallots and garlic. Wash the fermented black beans and set aside.
3️⃣ Deep-fry the chicken until slightly browned, then scoop out. Heat the wok and add some oil. Stir-fry the shallots, ginger, garlic, and fermented black beans until fragrant. Add the chicken and stir-fry until fully cooked.
4️⃣ Add 1 tsp sugar, 1 tbsp light soy sauce sauce, 1 tbsp Shaoxing wine, and some sesame oil. Stir-fry until well mixed. Garnish with spring onions and serve.
????Note:Luoding Fermented Black Beans is a specialty of Luoding City, Guangdong Province. The production process of these black beans includes traditional steps such as steaming, fermentation, washing, drying, and seasoning. The resulting product is known for its rich aroma and delicious flavor.

How To Cook Chicken Tausi (Salted Black Beans)
Tausi is fermented black beans. Its been fermented with salt so its very salty. I rinsed and drained it first before using it. So adjust seasoning at the near end of cooking, you don't want the dish to be too salty. Thank you so much for watching.
