How to make easy Mexican style rice | black bean rice | Simply Maha
This is one of my favorite side to have when eating Mexican food. Today I’ll be showing you how to make this easy Mexican style rice. This black bean rice is so easy to make and full of flavor.
Black Bean Rice
1. 1 1/2 cups rice
2. 2 tbsp olive oil
3. One 15 oz can of black beans
4. 1 dice onion
5. 2 garlic cloves
6. Half a red pepper (you can use green or both)
7. Salt to taste
8. 1 tsp bullion powder
9. 1 tsp chili powder
10. 1 tsp paprika
11. 1 tsp turmeric
12. 1 tsp cumin
13. 1 tsp onion powder
14. 1 tsp garlic powder
15. 2 tbsp tomato paste
16. 1 bay leaf
17. Half a lime
18. 1/4 cup cilantro
19. 2 1/4 cups hot water (more or less depending on how long you soak your rice)
Black Bean Rice Instructions
1. Wash your rice and let it soak in hot water for at least 30 mins.
2. Sauté your onions and peppers until they’ve become soft. Then add the garlic.
3. Throw in your spices and rice and toast them in the oil.
4. Once the rice becomes nutty add in your water and tomato paste along with bay leaf.
5. Once the rice half way done, add in your beans and continue cooking- make sure to drain and rinse your beans.
6. Finish off with a squeeze of lime and fork in some cilantro

★Ingredients★
~Cook the beans
1 ½ Cups Dry Black Beans
8 Cups Water; Reserve 3 Cups of the beans liquid after cooking
~Prepare the rice
4 Tbsp. Olive Oil
¼ Cup Chopped Onions
½ Bell Pepper; Any color will work
2 ½ tsp. Kosher Salt or to taste
½ tsp. Ground Black Pepper
6 Cloves Garlic; Minced or smashed with mortar and pestle
3 Cups Liquid From Cooked Beans
2 ½ Cups Jasmine Rice; Or Basmati Rice
Bunch of Fresh Parsley Leaves; About 5-6 sprigs

Easy Black Beans & Rice
Easy Black Beans and Rice is a delicious and simple recipe. Featuring bell peppers, onion, garlic, spices, and a splash of Tabasco, this dish is full of flavor and comes together in only 30 minutes!

Cuban black beans & rice /Congri / Moros y Cristianos / (How to get darker rice)
Arroz Moro
Ingredients:
2 cups of rice
1 /2 bag black
3 tsp vegetable oil
1-2 bay leaves
olive oil
1 /2 medium bell pepper diced
1 /2 med red pepper (diced )
1 large onions
6 garlic cloves
1 tsp oregano, dried
1/2 tsp cumin
1 tbsp Sazon completa (Badia) or Sazonador (Goya)
1 tsp salt
1 tsp ground black pepper or to taste
bacon or ham or neck bones or Spanish chorizo sausage diced
1 tsp brown sugar
1 tsp vinegar (optional)
1. Add beans to a pressure cooker 1 bay leaf, 1 -2 hammocks or 2 pieces of neck bones. Cook for 1 & 1/2 hours or 40 min in pressure cooker
2. When tender drain beans put beans in a bowl & save the broth. Set aside.
CONGRI INGREDIENTS:
1. In the another pot cook your Sofrito: add 2 tbsp of oil to sauté 1 med onion diced , 1 red pepper & 1 green pepper & 4 cloves of garlic. Add 1 tsp oregano, 1/2 tsp cumin, 1 bayleaf, 1 tbsp Sazon completa, salt & pepper to taste. Add bacon or ham or chorizo sausage diced for flavor. Add rice, stir fry for 3 minutes to coat rice.
2. Add beans & 2-3 cups beans stock, 1 tsp vinegar, 1 tsp sugar
3. bring to boil and cook on slow heat for about 25 minutes or until liquid is almost absorbed by the rice. Lower the flame, cover the pot with foil or a lid to seal in the steam. If rice is still hard add 1/4 c of bean broth
