Chicken Cacciatore
A classic Italian dish that I love making. The “caccia” in cacciatore means “hunt,” so I guess this is chicken hunter’s style. It's been an Italian-American favorite for years and a dish with roots going back to the Renaissance. This dish is good made with a whole chicken, but I prefer it made with drum sticks and thighs only. It's great with polenta or some pasta, but I love it with a chunk of crusty semolina bread. Chicken Cacciatore I’m going to do updated version with no skin on chicken I think is better
Side note ---- ( part way through the cooking process I took chicken out and moved the peaces around in pot. This was because the shape and size of my pot I wanted to take ones from bottom and move to top)
3 tbl spoons of olive oil 10-12 peaces of chicken
8 ounces of fresh mushrooms ( if you don't have fresh and want to use a can or two go head no worries) salt ( to taste a pinch or two) pepper ( to taste a pinch or two) 1 medium to large onion 1 stalk of celery 1 large red bell pepper 1 green bell pepper 1 tsp of Oregano 1 tsp of rosemary 1 tsp of red chilli flakes 2 bay leaves ( remove before serving ) 1 tsp of Basil 1 tsp of minced garlic 1 can of whole or tomatoes 28 ounces or 796 mls
Preheat the oven to 350 degrees F (175 degrees C).
Heat olive oil in a large Dutch oven over medium-high heat;
Add few cloves of garlic to flavor the oil for few 2-3 minutes then remove
Flour chicken and cook in batches about 4 minutes each side or until nicely browned on the outside. Remove to a bowl to capture the juices.
Stir in onions and mushrooms; cook until softened. Add salt and pepper. Stir in garlic, rosemary, red pepper flakes, oregano, Italian seasoning. Saute for a minute to get all those nice flavors melting together. Put in pepper slices .Now you will be adding your tomatoes, with your hand break up the whole tomatoes and pour into pot.
Place chicken pieces and any juices that have accumulated in the bowl into the sauce and veggies. Add more salt and pepper. try to arrange some of the vegetables on top of the chicken along with some of the tomato juices.
Bring pot to simmer then turn of burner and place pot in your preheated oven for 45 minutes to an hour or until chicken if fully cooked internal temperature 165 F
