How To make Chicken Breasts with Eggplant and Roasted Red Pepper Sauce
2 red bell peppers
2 small eggplant
(Italian or Chinese) 2 tablespoons olive oil
(2 to 4)
4 skinless boneless chicken breasts halves
1 onion :
sliced
1 garlic clove chopped
1/4 cup red wine vinegar :
or white
fresh herbs -- as noted
HERBS: 1 to 2 tablespoons finely chopped fresh herbs, such as thyme or parsley. To Roast Peppers: Place the peppers on the grill or under the broiler, turning them, until charred all over, nearly black. Remove and place in a plastic bag to steam off skin. When cool enough to handle, remove charred skin and seed them.
Preheat the grill or broiler. Halve the eggplant, score in 2 or 3 places, and brush with some of the oil. Place on the grill, cut side towards the heat. Turn after 5 minutes. Cook until almost soft. Add the chicken breasts and cook 3 minutes on each side, until done. Remove to a plate. Heat the remaining oil in a large frying pan until singing. Add the onion and garlic, and cook until soft. Puree the peppers and vinegar in a food processor or blender until smooth. Add the puree, eggplants, and chicken to the frying pan, and heat together, about 5 minutes. Place the chicken mixture on a platter surrounded by the eggplant and sauce. Sprinkle with the herbs. See Couscous (dupree) [patH mcRecipe]

——Ingredients——
3 chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon seasoned salt
:
——bang bang sauce——
1 cup mayonnaise
1/2 cup sweet chili sauce
2 tablespoon chili garlic sauce or Sriracha
:
1. Score the chicken breasts about 1/8-inch deep and 1/2-inch apart. Make cross-hatch cuts. Mix all the spices together (garlic powder, onion powder, paprika, seasoned salt) and season the chicken breasts on both sides.
2. Make the bang bang sauce - mix together the Mayo, sweet chili sauce and chili garlic sauce or sriracha. Make sure you reserve about a couple tablespoons of the sauce for drizzling on top when serving the dish.
3. Place the chicken breasts in the air fryer basket and spread about 2 tablespoons of the bang bang sauce on top, then air fry at 390° for about 20 minutes depending on the size of the chicken breasts or until the internal temperature hits 165 degrees.
4. Once done let the chicken rest for about 10 minutes , then serve over white rice drizzle with the reserved bang bang sauce, garnish with some cilantro or green onions and enjoy.

(serves 4)
* 12 chicken wings(drums and flats)
* ½ teaspoon each of
* salt
* Crushed Bouillon(knorr chicken or maggi)
* Paprika
* Garlic powder
* Onion powder
* Pepper
* Few spring of fresh thyme or 1 tsp dried
* 4 medium Irish potatoes/russet potatoes

For the vegetable stir fry:
* 2 tablespoons of butter

* Seasoned vegetable stir fry with:
* ½ teaspoon each of salt, chicken bouillon and pepper
* Slurry:
* 1 tablespoon of cornstarch
