How To make Pasta with Roasted Eggplant and Tomato Sauce
1 md Eggplant
1/2 lb Penne, rigatoni or pasta
-shells 1 1/2 c Tomato sauce
4 Garlic cloves
finely minced
2 tb Capers :
rinsed and coarsely
-chopped pn Hot red pepper flakes 2 ts Dried oregano
Salt and pepper
Preheat the oven to 450 degrees. Prick the eggplant in a few places with a knife. Place on a baking sheet and roast for about 40 minutes, turning occasionally for even cooking, until the eggplant is tender but not falling apart. When the eggplant is cool enough to handle, peel it and dice the pulp. Place the pulp in a colander to drain away any bitter juices. Discard the skin. Bring a largepot of salted water to a boil. Drop in the pasta and stir the eggplant and the rest of the ingredients and warm through. season to taste. Adjust salt, pepper, and hot red pepper. If the tomatoes are tart, add a pinch of sugar to compensate. When the pasta is al dente, drain and toss with the sauce. Serve at once. From DEEANNE's recipe files

SPICY EGGPLANT PASTA
Back in my restaurant days, my go-to shift meal was Pasta alla Norma, a Sicilian eggplant pasta with a fiery tomato sauce. I loved it because it was affordable, super satisfying, & never left me feeling sluggish.
All these years later, it's one of my favorite pastas, but I rarely make it at home because it’s a little fussy.
✨BUT!✨ I finally figured out a lazy girl-approved method, & it is SO good!!!
There are 3 secrets:
✔️Roast eggplant for perfectly crispy (never soggy!) results
✔️Skip homemade sauce & use your favorite jarred marinara instead. Stirring it into garlic & red pepper-infused olive oil adds even more depth & restaurant-worthy flavor!
✔️Use a short, tubular pasta! I’m obsessed with @DelalloFood Tortiglioni, which is like a twisted rigatoni – the twisted ridges help it cling to the sauce & the hollow center traps a little eggplant in every bite!
Light, fresh, completely meatless, & totally restaurant-worthy, ready in 45 minutes or less!
2 medium eggplants
¼ C + 2 Tbsp EVOO
8 oz tortiglioni or pasta of choice
2 cloves garlic
1 tsp red pepper flakes
2 C marinara sauce
1 C fresh basil leaves
½ C grated parmesan
