How To make Chestnut Mushroom Casserole
2 c Chopped chestnuts
1 lb Fresh mushrooms
1 ts Vegetable bouillion powder
1 cn Mushroom soup
2 1/2 c Half and half
1 Stick of butter
4 tb Flour
1/2 ts Salt
1/2 ts White pepper
12 oz Very sharp cheese
Make a white sauce of the butter, flour and cream. Add salt, pepper and granulated bouillion dissolved in just a little hot water. Add the mushroom soup. Saute the mushrooms in a little butter and add with the chestnuts. Place in a buttered casserole and top with cheese. Place in a 350 F. oven and heat for 20-30 minutes, until cheese is melted and dish is bubbly. Serve hot. (This is a huge casserole. Great for company or to take to a covered dish meal. For a single family, prepare two casserole dishes and freeze one after fixing. Be sure to thaw completely before reheating.) Today I'm making my easy creamy garlic mushroom sauce. This cream of mushroom sauce recipe is one of my top mushroom recipes as it's very versatile and pairs beautifully with so many dishes. In this video I made creamy mushroom pasta but you can add it to almost anything you like. This sauce can also be made in a large batch and stored to use in different ways during the week!

*INGREDIENTS*
1/2 lb / 200g mushrooms
6-7 (1 tbsp) garlic
1 medium white/yellow onion (1 small purple onion)
1 tbsp butter
1 cup chicken stock/vegetable
1/3 cup heavy cream
1/3 cup parmesan cheese
1 tbsp dried oregano
bunch of parsley
salt and pepper
• No stock?
You can use stock cubes dissolved in 1 cup of water. Or use plain water but the flavor will be slightly mellowed
• No oregano/parsley?
You can use Italian herb mix, basil or rosemary also pair well with mushrooms
• No heavy cream?
Substitute with evaporated milk/half and half/fresh cream. The duration of cooking and texture will need to be altered
• No parmesan cheese?
Any cheese that will melt smoothly without causing stringiness can be used. Alter the quantity as needed
Tips:
• Mushrooms need to be cooked until it's browned to release maximum flavor
• Be weary of salt if used store-bought stock. To be safe use low sodium stock or alter the measurements depending on your stock
• In case it ends up too salty, add sugar to balance the saltiness

How to Cook Chinese Pork & Sliced Chestnut Casserole
I just discovered a new pork casserole meal idea that will be perfect to cook for your family, holidays and special occasions. This video shows you a recipe for how to cook this delicious Chinese pork and sliced chestnut casserole.
So, I want to share it with you so you can prepare it for dinner tonight.
Ingredients:
Cubed pork - 2 lbs.
Onions - 2
Green pepper - 1
Celery - 1 c.
Cream of chicken soup - 1 can
Cream of mushroom soup - 1 can
Sliced mushrooms - 1 can
Sliced water chestnuts - 1 can
Soy sauce - 4 Tbsp.
Long grain rice - 1/2 c. (uncooked)
Cooking Directions:
STEP:1 Preheat oven to 325 degrees F.
STEP 2: Chop onions, green pepper and celery
STEP 3: Pour a small amount of oil in skillet, then add cubed pork and let brown.
STEP 4: Now, add chopped onions, chopped green pepper and chopped celery to skillet.
STEP 5: Saute ingredients until onions are translucent.
STEP 6: Mix sauted onion mixture with cream of chicken soup, cream of mushroom soup, sliced mushrooms, sliced water chestnuts, soy sauce and uncooked long grain rice in a bowl.
STEP 7: Then, add ingredients to casserole dish, place in preheated oven and bake, uncovered for 2 hours.

Garlic Mushroom Pepper Fry - Simple, Quick & Easy Mushroom recipe
Peppery delicious stir fried mushrooms which hardly takes a few minutes to prepare, this stir fried mushroom recipe is a great idea for your weeknight dinner or if you are feeling lazy to make something elaborate.

Ingredients required for making Garlic Mushroom Pepper Fry -
* Bell Peppers(Capsicum) - can choose different colors or any color according to your preference and convenience -- 250 gm
* Mushrooms - 500 gm ( I have taken white regular mushrooms and cremini mushrooms. You can use any mushrooms according to your choice) . Do not keep your mushrooms soaked in water. Rinse them very well under running water just before cooking them.
* Onion - 1 small or half of a medium onion
* Garlic - 5 to 6 large cloves
* Ginger - 1 inch
* Jalapeno/ green chillies - According to your preference
* Red Hot Chilli - 1 (totally optional)
* Whole black peppercorns - 1 teaspoon, use less if you want your dish less spicy.
* coriander leaves/cilantro - I used the stalks for stir frying and the leaves as a garnish. You can even use green onions (spring onions).
* salt - as per taste
* lime/lemon juice - 1 tablespoon
* oil - 2 tablespoons
For the sauce -
* Light soy sauce - 1 tablespoon
* Dark Soy sauce - 1 tablespoon
* Tomato ketchup /tomato sauce - 1 tablespoon
* Sugar (optional)- 1 teaspoon
* Salt - as per taste
Serve this with hot steamed rice or chow mein or bread roll

Recipe: Rice and water chestnut casserole
News Sentinel food writer Mary Constantine prepares a simple rice and water chestnut casserole. This video recipe is part of a collection of recipes from the Stirring the Pot series with Mary Constantine, based in East Tennessee.
RECIPE:
1 stick butter or margarine
1 (7.4 ounce) box spanish rice mix
1 (10.5 ounce) can onion soup
1 can water
1 (5 oz.) can sliced water chestnuts
1 (4 oz.) can sliced mushrooms
1/2 cup pecan halves
Melt butter or margarine. Add rice (with flavor packet), soup and water. Bring to a boil. Remove from heat. Add sliced water chestnuts and mushrooms. Pour into casserole and top with pecan halves. Bake at 350 degrees for 30-40 minutes.
