2 1/2 c Brown Rice, cooked 3 Green Onions (scallions), Chopped 1 c Lowfat Cottage Cheese -or- Hoop Cheese 1 t Dried Dill 1/4 c Parmesan Cheese, grated 1/2 c Lowfat Milk Combine all the ingredients in a mixing bowl. Pour into a lightly oiled casserole. Bake in a 350-degree oven for 15 to 20 minutes. Serves 4 One Serving
This is the BEST Broccoli Cheese & Rice Casserole EVER!! Here are the deets ????????????:
????????????????????????????????????????????: ???? Rice (I used jasmine rice) ???? Fresh Broccoli Florets ???? 1 Tbsp. Of Flour ???? 2 Tbsp. Of Butter ???? 6 oz of Heavy Cream (Add more if needed) ???? 6 oz of Whole Milk (Add more if needed) ???? Smoked Gouda Cheese, Mozzarella Cheese & Monterey Jack Cheese ???? Seasonings 1 Tsp. Each - Salt, Black Pepper, Onion & Garlic Powder, Smoked Paprika.
????????????????????????????????????????: 1. Wash rice to remove starch. Rinse until water runs clear. Drain. 2. To boil your rice add about 2 Tbsp. Of oil. Lightly heat your oil before adding in your rice to toast for about 1-2 minutes. Then add just enough water to cover the top of the rice. Cover the pot. 3. Turn your stove top down to medium heat and boil rice until til fluffy and water has evaporated. 4. In a small pot, add about 1 Tbsp of water and then add your broccoli. Steam for 5-6 mins. 5. To make cheese sauce add 2 Tbsp. Of butter. to a sauce pan. Melt this and then add 1 Tbsp. Of flour. This will start your roux. 6. Next, add in your heavy cream and whole milk. Stir well and allow to heat up for a bit before adding in your seasonings. 7. Add some of your shredded cheese to this mix to create your rich and creamy cheese sauce. 8. In a separate bowl add in your cooked rice, your steamed broccoli and the cheese sauce. Mix well. 9. Grease a casserole dish and then add one layer of your cheesy broccoli rice mixture. Then, add a layer of shredded cheese. (Repeat this step for your second layer) 10. Bake in 350-360 degree oven for 25 mins. For the last 1-2 mins broil the top to create a crispy cheese layer. Serve & Enjoy ????
