12 eggs
3 cups of milk
12 slices white bread (cut off crust and cube)
1 1/2 teaspoons salt
1 1/2 teaspoons ground mustard
1 pound ground pork sausage
1 1/2 cups grated cheddar cheese (I use a mix of cheddar and jack)
Directions:
Brown sausage. Whisk eggs and milk together. Add salt and mustard. Then add sausage and cheese and stir. Pour all ingredients over cubes of bread. Even out to make sure all bread is covered with egg mixture.
Refrigerate for at least 12 hours and then cover with foil. Bake at 350° for 40-45 minutes. Remove foil and bake for an extra 5-10 minutes until edges are slightly browned. Serve immediately. Leftovers can be frozen or turned into breakfast burritos.

Shauna Sever ( ): As with any great casserole, this broccoli and cheese bread pudding is a delicious, family-friendly dish that uses simple ingredients but makes for a satisfying and hearty dish. It's perfect for a weeknight meal or for a casual dinner party.

Broccoli and Cheese Bread Pudding
Serves 6 to 8
1 1-pound (450 g) loaf rustic artisan bread, cut or torn into 1″ (30 cm) pieces
6 large eggs
3 cups (700 mL) whole milk
1 small onion, finely chopped
1 clove garlic, minced
1¼ cups (110 g) grated sharp Cheddar cheese, divided
Kosher salt and black pepper
1 10-ounce (280 g) bag frozen broccoli florets, thawed and drained (large pieces cut in half)
Position a rack to the center of the oven and preheat it to 375°F (190°C). Butter a 2½ -3 quart (2.3 -- 2.9 kg) baking dish. Place the bread chunks in a large bowl.
In another large bowl, whisk together the eggs, milk, onion, garlic, 1 cup (90 g) of cheese, ½ teaspoon (2.5 mL) salt and a few grinds of black pepper. Add the bread cubes and let soak for about 5-10 minutes, until most of the liquid is absorbed. Fold in broccoli.
Turn the bread pudding into the prepared baking dish. Sprinkle with remaining cheese. Bake uncovered until puffed and golden and a knife inserted in the center comes out clean--anywhere from 45-60 minutes depending on the size and depth of your baking dish. Let cool on a wire rack for 15 minutes before serving.

4 cups day-old, challah or brioche bread, cut into 1-inch cubes.
2 tablespoons olive oil
1 tablespoon unsalted butter
1 medium sweet yellow onion peeled and diced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ teaspoon granulated sugar
½ lb. thinly-sliced good deli ham roughly cut
6 large eggs
1½ cups milk or half ‘n half
½ teaspoon dry mustard
¼ teaspoon grated nutmeg
2 teaspoons fresh thyme leaves minced
Salt & Pepper to taste
1 cup shredded Gruyere or Swiss cheese

INSTRUCTIONS
Spray an 8-inch baking dish (1½-2 qt) with non-stick cooking spray.
Spread the cubed bread in the bottom of the dish.
Heat oil and butter in a large skillet over medium-low heat. Add diced onion, salt, black pepper and sugar. Sauté until onions are lightly caramelized, approximately 10 minutes. Be careful not to burn the onion.
In a medium bowl, whisk together the eggs, half and half, dry mustard, nutmeg, thyme, salt and pepper.
Spread the ham over the bread cubes, then spread the onion mixture on top of the ham. Layer on the Gruyere or Swiss cheese then pour the egg mixture over the cheese.
Press down gently on the top to ensure all bread cubes get soaked with the egg mixture. Cover and refrigerate overnight.
Before baking, warm the casserole on the counter for 15 minutes and preheat the oven to 350 degrees F.
Bake, uncovered, 40-50 minutes or until center is set and edges are bubbly and top begins to brown. A knife inserted in the center should come out clean.
If casserole is browning too soon, loosely cover it with foil near the end of the cooking time.
The casserole is delicious served any meal.
