We took everything you love about breakfast — hash browns, sausage, and eggs — and baked them into a savory breakfast casserole with spinach & bell peppers and lots of bubbling cheddar cheese. This sausage and hash brown egg bake is so easy, you can even throw it together before you’ve had your morning coffee.

BREAD BOWL:
▪360g or 1 1/2c warm water (86F/30C)
▪3g or 1tsp instant yeast
▪15g or 1Tbsp white distilled vinegar
▪110g ripe poolish (Stir together 55g or 1/4c warm water, small pinch instant yeast, 55g or 1/2c bread flour, cover and allow to rise at room temp for 12-24hrs)
▪550g or 4 3/8c bread flour
▪11g or 2tsp salt
Add ingredients including all of the poolish to a bowl and stir to combine until a clump has formed. Continue to mix with a very wet hand until fully combined and no longer clumpy. To us a stand mixer instead, just mix to combine.
Cover and allow to rise for 30min. Conduct strength building folds (stretch and folds and slap and folds) as shown @1:45. Cover and ferment for another 30min. Repeat the stretch and folds/slap and folds. Cover and ferment for 1 hour.
Flip floured dough onto floured work surface then divide dough into 4 even (250ish grams) pieces. To shape degas, then follow shaping instructions as shown @2:58. Place shaped balls onto parchment and proof covered at room temp on a non-stone or steel surface for 60-90min.
Split parchment onto 4 quadrants so that each dough ball is on it’s own small piece of parchment. Mist with water then score the top of each dough ball.
Transfer dough balls onto preheated pizza stone, spritz with water again, cover, and bake at 460F/240C for 15min.
After 15min CAREFULLY remove lid (escaping steam will be v hot). Rotate loaves and spread apart. Continue baking for 20min.

SOUP
▪350g or 1 large white onion, small diced
▪125g or 1 small bulb fennel, small diced
▪20g or 6 cloves garlic, minced
▪125g or 1 large carrot, medium diced
▪250g or 2 small yukon gold potatoes, medium diced
▪375-400g or 3-4 small heads broccoli, medium diced
▪75g or 1/3c olive oil
▪Salt
▪50g or 1/3c flour (gluten free flour works too)
▪1500g or 6 C. chicken stock
▪250g or 1c heavy cream
▪225g or about 1 3/4c - 1 7/8c cheddar cheese (shredded)
Preheat large pot over med-high heat. Add oil. Add vegetables and a pinch of salt. Stir. Sweat veg for 6-8 mins. Once beginning to soften, add flour. Stir to coat veg and cook for a couple of minutes, just to cook off the raw edge, before adding in chicken stock and cream. Stir, reduce heat to med-low and continue to cook for 10min.
When veggies are tender, but not mushy, reduce heat to low. Scoop about 3-4c of soup into a tall sided sauce pot and blend with immersion blender (or blend with standard blender). Add blended soup back into the original soup pot and stir. Stir in cheese. Taste for seasoning. I typically add an additional pinch of salt or two.
Garnish with black pepper and an additional pinch of shredded cheese!

Ham & Cheese Breakfast Casserole
HAM AND CHEESE BREAKFAST CASSEROLE is our favorite make ahead breakfast for any special occasion. This easy breakfast casserole with ham, cheese, bread, eggs, herbs, and more is just so delicious! This cheesy ham and egg casserole is sure to please everyone and it’s just so easy to make!
INGREDIENTS & INSTRUCTIONS:

4 cups day-old, challah or brioche bread, cut into 1-inch cubes.
2 tablespoons olive oil
1 tablespoon unsalted butter
1 medium sweet yellow onion peeled and diced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ teaspoon granulated sugar
½ lb. thinly-sliced good deli ham roughly cut
6 large eggs
1½ cups milk or half ‘n half
½ teaspoon dry mustard
¼ teaspoon grated nutmeg
2 teaspoons fresh thyme leaves minced
Salt & Pepper to taste
1 cup shredded Gruyere or Swiss cheese

INSTRUCTIONS
Spray an 8-inch baking dish (1½-2 qt) with non-stick cooking spray.
Spread the cubed bread in the bottom of the dish.
Heat oil and butter in a large skillet over medium-low heat. Add diced onion, salt, black pepper and sugar. Sauté until onions are lightly caramelized, approximately 10 minutes. Be careful not to burn the onion.
In a medium bowl, whisk together the eggs, half and half, dry mustard, nutmeg, thyme, salt and pepper.
Spread the ham over the bread cubes, then spread the onion mixture on top of the ham. Layer on the Gruyere or Swiss cheese then pour the egg mixture over the cheese.
Press down gently on the top to ensure all bread cubes get soaked with the egg mixture. Cover and refrigerate overnight.
Before baking, warm the casserole on the counter for 15 minutes and preheat the oven to 350 degrees F.
Bake, uncovered, 40-50 minutes or until center is set and edges are bubbly and top begins to brown. A knife inserted in the center should come out clean.
If casserole is browning too soon, loosely cover it with foil near the end of the cooking time.
The casserole is delicious served any meal.

Southern Baked Macaroni & Cheese Casserole - I Heart Recipes
This creamy and delicious Southern Baked Macaroni & Cheese is the perfect comfort food side dish for any meal. It includes only two, easy-to-find cheeses, tastes amazing, and comes together so easily.
Want to know how to make this cream, delicious mac and cheese casserole? The process is pretty darn simple, y'all. Start off by cooking the pasta. I use elbow macaroni. To make the creamy, cheesy sauce, start with a roux (butter and flour), add half and half (important for EXTRA creaminess!), cheese, and seasonings. This cheese sauce is to DIE for, ya'll.
Next, assemble the mac and cheese casserole. Mix the cooked pasta and cheese sauce in a bake dish, top with extra shredded cheese (we're using tons of cheese in this recipe, y'all, be prepared!), panko bread crumbs, and she's ready to bake!

0:11 - Prepare the macaroni pasta.
0:20 - Cook until al dente.
0:23 - Add butter to a pan.
0:30 - Melt the butter.
0:35 - Add flour.
0:40 - Whisk until well combined.
0:52 - Slowly whisk in half and half.
1:05 - Add shredded cheese.
1:13 - Whisk until smooth.
1:23 - Sprinkle in seasonings.
1:28 - Mix well.
1:35 - Place the macaroni into a large mixing bowl.
1:41 - Pour in cheese sauce.
1:48 - Fold the ingredients together.
1:59 - Place some of the macaroni mixture in a prepared bake dish.
2:14 - Add a layer of shredded cheese.
2:28 - Add another layer of macaroni mixture.
2:38 - Add another layer of shredded cheese.
2:47 - Melt butter.
2:50 - Add Italian bread crumbs.
2:55 - Mix well.
2:58 - Top the casserole with the bread crumbs.
3:05 - Bake uncovered for 25-30 minutes.
3:25 - Dish and serve.
