How To make Cathy's Beef 'N Potato Casserole
2 1/2 pounds 93% lean ground beef
3 large eggs
2 tablespoons Worcestershire sauce
1 medium onion
chopped
1 clove elephant garlic :
minced
8 Yellow wax peppers, seeded halved lengthwise
2 cups frozen peas
2 cups frozen corn
26 ounces shredded potatoes :
fresh or frozen
1 can cream of chicken soup, condensed
1 can tomato soup, condensed
5 ounces water
5 dashes hot red pepper sauce
1 teaspoon salt
1/2 cup shredded cheddar cheese -- up to 1 cup
Preheat oven to 400-degrees F.
Mix ground beef, eggs, Worcestershire sauce, onion and garlic together.
Place ground beef mixture in deep (at least 4-inches) pan measuring at least 9 x 13 inches.
Top ground beef with a single layer of peppers. Mix peas and corn together and spread over peppers. Top with a layer of shredded potatoes.
Mix remaining ingredients together and pour evenly over potatoes.
Bake casserole for 1 hour and 15 minutes, or until meat is cooked through.
Remove from oven and top with cheese.
Cut into 8 portions and serve.

4 Chicken leg quarters (soft chicken)
Carrots
Potatoes
1 tbsGarlic Powder
2 Tablespoons Vegetable Oil
1 tbsp Onion Powder
1 tbsp Smoked Paprika
1 tsp Dried Thyme
1 tsp Oregano
1 tbs Onion Powder
1 tbsp Chicken seasoning
/Stock cubes (I used Knorr Chicken Bouillon cubes)
Salt to taste
Oven temperature: 170°C / 340°F

I love serving a simple cold salad with this casserole, but you can also just enjoy it alone if you wish, or you can add your favorite vegetable to this casserole as a substitute. INGREDIENTS————————————-
1 1/2 lbs. Ground beef 80/20
1 C. Chopped onions
1/4 C. Chopped green onions
1/2 C. Diced green bell pepper
1/2 C. Diced orange bell pepper
1 med/large diced tomato
3 med/large minced garlic cloves
2-2 1/2 tsp Seasoning Salt
3 Tbs All Purpose Flour
3/4 C. Beef broth
Tomato slices to top (i used 4 slices)
Pepper as needed
2 Large Russet potatoes (cut in half long way then sliced)
3 Tbsp cooking oil of your choice (to fry potatoes)
6 oz. Freshly grated Mozzarella Cheese or as needed
6 oz. Freshly grated white Sharp Cheddar Cheese or as needed
*BAKE 350 for 35-40 minutes…cover with foil if you wish so tomato doesn’t get mushy.

1 cup chicken broth
For Potatoes
2 lbs cooked potatoes
4 tablespoons butter
1/2 cup milk
1/2 teaspoon black pepper
2 teaspoons salt
Cayenne pepper for sprinkling on top of potatoes
1 tablespoon chopped parsley sprinkled on top of potatoes

In this video we are making Companions Meatball Bake
Ingredients:
Stormcloak Seasoning:
2 teaspoons dried dill
1/2 teaspoon grains of paradise
1 teaspoon mustard powder
2 teaspoons fennel seeds
Directions: combine all the ingredients in a spice blender or mortar and pestle. Store extra spices in an airtight container.

1 pound baby potatoes
2 tablespoons vegetable oil
1 pound ground beef or other meat
1/2 cup breadcrumbs
1 egg
1 tablespoon sour cream
1 clove garlic, minced
1/4 teaspoon Stormcloak Seasoning
1 cup boiling water
1/4 cup sour cream
2 to 3 tablespoons tomato paste
