How To make Cathy's Fish and Rice
1/2 lb White fish (I used frozen
Pollock), cut in 1 sm Onion -- chopped
3 Cloves garlic
Handful cherry tomatoes -halved Some mushrooms -- sliced Flour (for dredging) Oil (for sauteing) 110 ml White wine
Curry powder Black pepper Cooked rice 1. Saute the onions in a small amount of oil till they start to soften.
Add the garlic and cook for a few minutes, and then add the mushrooms and cook for a few minutes more, till they lose their raw look. 2. Meanwhile, put a few tablespoons of flour and the pepper into a plastic
bag and shake the fish cubes in the bag (don't forget to close the bag!) Remove the fish from the bag, shaking off any excess flour. 3. When the vegetables are cooked to your liking, remove them from the pan
and set them aside. You could drain them on a paper towel to remove a bit of the oil, but it's not necessary. 4. Add a little more oil to the pan, and heat it for a moment. Drop the
fish pieces in the oil, and saute them till them start to turn opaque. Add the vegetables, the cherry tomatoes & the curry powder, and stir to mix them in. Pour in the white wine (or other liquid of your choice) and cook down till most of the liquid has evaporated. Serve over rice. Author's Notes: This is a recipe I made up the other night, when I didn't feel like going out to the store. It's not exactly haute cuisine, but it tasted OK, and used common ingredients. It'squick to prepare, and doesn't taste very fishy since the dominant flavor is the curry powder. (All measurements are approximate. This made more than enough for 2 people). The thing about this sort of recipe is that you can vary it in countless ways ~- add some bell peppers if you want, or add different spices. Use soy sauce and call it Oriental. Ingredients:
Pompano fish,3gloves garlic,1pc bell pepper,scallion,1pc carrot small size,6tbsp cooking oil,1/2cup water,salt ,tomatoe sauce and sweet chili sauce,1/4 cup brown sugar,2tsp corn starch.
How to cook:
Dredge the pompano in corntarch.Heat oil in a medium-sized frying pan and pan-fry each pompano.Set aside
In another medium-sized pot,saute garlic,onion,tomato and ginger.Add the carrot,bell pepper.add in the sweet chilli and tomatoe sauce,sugar and soy sauce (optional) with the salt and pepper.Serve sauce over the fried pompano.

കുടംപുളിയിട്ട ആവോലി മീൻ കറി | Avoli Curry | Kerala Style Fish Curry
Ingredients
Pomfret – 1/2 kg.
Pot tamarind – 6nos.
Ginger garlic paste – 1 tablespoon.
Green chilies – 6 nos.
Coconut oil – 1 Tablespoon.
Mustard – 1 teaspoon.
Chili powder – 1 and 1/2 tablespoon.
Turmeric powder – 1/2 teaspoon.
Fenugreek powder – 1/2 teaspoon.
Curry leaves – 2 stems.
Salt to taste.
Method
1 Clean the fish properly.
2 Make ginger garlic paste, slit 6 green chilies to 4 each.
3 Heat a pan with 1 tablespoon oil, splutter mustard
4 Saute in the ginger garlic paste, green chilies and cook till the raw smell subside. Add in the curry leaves and saute.
5 Saute in 1 and 1/2 tablespoon chili powder. When rawness subsides, add the pot tamarind, water, and salt as per taste. Mix 1/2 teaspoon fenugreek powder and turmeric powder and bring it to boil.
6 On the boil add the fish. Cover and cook.

7 മുളകുപൊടി – ഒന്നര ടേബിള്സ്പൂണ്
8 മഞ്ഞള്പൊടി- അര ടീസ്പൂണ്
9 ഉലുവാപൊടി – അര ടീസ്പൂണ്
10 കറിവേപ്പില – രണ്ട് തണ്ട്
11 ഉപ്പ് ആവശ്യത്തിന്
തയ്യാറാക്കുന്ന വിധം
1 ആദ്യമായി അരകിലോ ആവോലി മീന് വെട്ടി വൃത്തിയാക്കി വയ്ക്കുക.
2. ഇഞ്ചി, വെളുത്തുള്ളി, തൊലി കളഞ്ഞ് ചതച്ചെടുക്കുക. പച്ചമുളക് ആറെണ്ണം നാലായി കീറിവയ്ക്കുക.
3. പാത്രം ചൂടാകുമ്പോള് ഒരു ടേബിള് സ്പൂണ് വെളിച്ചെണ്ണ ഒഴിക്കുക. ഒരു ടീസ്പൂണ് കടുക് ഇട്ട് പൊട്ടിക്കുക.
4. ഇതിലേക്ക് ഇഞ്ചിയും വെളുത്തുള്ളിയും ചതച്ചത് ചേര്ക്കുക, പച്ചമുളക് നാലായി കീറിയതും ചേര്ത്ത് പച്ചച്ചുവ മാറുന്നതു വരെ വഴറ്റുക. തുടര്ന്ന് കറിവേപ്പിലയും ചേര്ത്ത് മൂപ്പിക്കുക.
5. ഇവ മൂക്കുമ്പോള് ഒന്നര ടേബിള്സ്പൂണ് മുളകുപൊടി ചേര്ത്തിളക്കുക.
6. മുളകുപൊടി മൂത്തതിനുശേഷം ആറ് കുടമ്പുളിയും ചേര്ക്കുക. ശേഷം ആവശ്യത്തിന് ഉപ്പും വെള്ളവും ചേര്ത്ത് യോജിപ്പിക്കുക. അര ടീസ്പൂണ് വീതം ഉലുവാപൊടിയും മഞ്ഞള്പൊടിയും ചേര്ത്ത് തിളപ്പിക്കുക.
7. കറി തിളച്ചതിനുശേഷം വൃത്തിയാക്കി വച്ച ആവോലി മീന് ചേര്ക്കുക. ശേഷം പാത്രം അടച്ചുവച്ച് വേവിക്കുക.
സ്വാദിഷ്ടമായ കുടമ്പുളിയിട്ട ആവോലി മീന്കറി തയ്യാര്.
