How To make Carrot Coconut Cake
3 md Carrots, slices
1 1 inch square orange peel
1 c Orange juice
1/4 c Cooking oil
1 pk Yellow cake mix
3 Eggs
1 1/3 c Coconut
3/4 c Brown sugar
3/4 c Chopped pecans
1/3 c Milk
1/4 c Butter or margarine
-melted 1 ts Vanilla
Combine carrots, orange peel, juice and oil in a blender container or food processor bowl. Cover and blend or process until carrots are finely chopped. In a large mixer bow combine carrot mixture, cake mix and eggs. beat just until blended. Beat on medium speed for 2 minutes, scraping sides occasionally. Turn batter into a greased and floured 13x9x2 inch baking pan. Bake in 350 oven for 35 to 40 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from oven. Turn oven to broil. Combine coconut, brown sugar and pecans. Stir in milk, butter and vanilla. Using the back of a spoon or small spatula, quickly spread coconut topping over hot cake in pan. Broil cake 4 to 5 inches from heat for 2 to 3 minutes or until coconut topping is golden brown. Serve warm or cool. -----

Carrot Coconut Cake/ Carrot with pineapple & wallnut cake
Ingredients
▪︎plain flour 250 gms
▪︎white sugar 150 gms
▪︎baking powder 2 tsp
▪︎baking soda 1 tsp
▪︎salt 1 tsp
▪︎eggs 3 medium size
▪︎vegetable oil 150 mls
▪︎dessicated coconut 100 gms
▪︎canned pineapple chunks 220 gms
▪︎chopped wall nuts 50 gms
▪︎grated carrots 340 gms
Directions
- with a mixer or whisk mix all the dry ingredients (flour, sugar, baking powder, baking soda, & salt)
- add the other ingredients (eggs, vegetable oil, dessicated coconut, canned pineapple chunks, chopped wall nuts & grated carrots) at a time.
- spread your mixture on a tray, you can shake to compress the mixture removing any empty space within the mixture
▪︎using an oven
- place the tray with mixture in a preheated oven, set for 1 hour on 160 °C or 320 °F or gas mark 2, check with a skrewer by inserting into the cake, if it comes out clean then it is cooked
▪︎using a steamer
- placed the tray with mixture in a preheated steamer & cook for 35-45 minutes or check with a skrewer
- serve & enjoy

All Purpose Flour 2 Cups (250 g)
Grated Carrots 2 Cups (350 g)
Egg 4 medium sized
Sugar 2/3 to 1 Cup. ( depending on the sweetness you want)/(135g to 200g)
Oil 2/3 Cup ( 150ml)
Vanilla Essence. 1 tsp
Baking Powder. 1&1/2 tsp
Baking Soda 1/2 tsp
Bake in a preheated oven @ 165 C for 60 minutes or until a skewer inserted in the middle comes out clear..
Pan. 6 inch

Amazing Carrot Cake Recipe
My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!
