2 Eggs
1 1/2 ts Baking powder
2/3 c Dark brown sugar; packed
1/2 ts Baking soda
1/2 c Vegetable oil
1 ts Cinnamon
1 1/2 c Finely grated carrots
1/4 ts Salt
1 c Buttermilk
1 1/4 c Bran
1 ts Vanilla
1/2 c Currants
12 Date halves.
Preheat over to 350. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and In a large bowl beat eggs lightly; add brown sugar, vegetable oil, carrots Bake 25-30 minutes untill muffins pull away from sides of the pan. Makes 12-14 muffins Pam Star Converted by MMCONV vers. 1.10

Carrot Muffins
Ingredients
* 1 cup brown sugar
* 1 1/2 cups shredded carrots
* 1 cup buttermilk
* 1/2 cup vegetable oil
* 3 eggs
* 2 cups all purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground ginger
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon ground cloves
* 1/2 teaspoon salt
Instructions
* Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
* Add the brown sugar, grated carrots, buttermilk, oil, and eggs to a large bowl and whisk together to combine.
* Add the flour, baking soda, baking powder, ginger (if using), cinnamon, nutmeg, cloves, and salt to the bowl and combine with a wooden spoon or rubber spatula just until the flour disappears.
* Divide the batter evenly between the prepared muffin cups, filling them each about 2/3 full.
* Bake at 350 degrees Fahrenheit for about 19-22 minutes or until golden brown.

Hi there and welcome to my channel. In this video, I'm showing you how to make a copycat of Mimi's Honey Bran Muffins. I loved the muffins Mimi's used to offer but they stopped selling them years ago. Well, can I just say that these are even better?? Give them a try and let me know if you agree.
Ingredients:
2 cups raisin bran cereal, processed in the food processor to make about 1 cup
½ cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup brown sugar (light or dark will work – I used light)
1/4 cup honey (Sorry! I said 1/2 cup in the vid!)
2 tablespoons molasses
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 tablespoon grated orange zest
GLAZE:
3 tablespoons sugar
3 tablespoons brown sugar, packed
4 tablespoons butter, melted
2 tablespoons honey
1 teaspoon water
Makes 12 muffins*Bake 350 F for 15-20 minutes
