How To make Cafe Au Lait Cake
3/4 lb butter, -- softened
1/4 c coffee-flavored liqueur
1/3 c instant coffee granules
3/4 c milk
3 TB unsweetened cocoa powder
1/3 c confectioners' sugar
2 c granulated sugar
1 ts pure vanilla extract
1/2 ts salt
5 lg eggs
3 c all-purpose flour
1 ts baking powder
1/2 ts baking soda
: Additional confectioners' : sugar for garnish Preheat oven to 350. Grease and flour a 10 inch tube pan. Heat liqueur and instant coffee in a small saucepan and stir until coffee dissolves. Add enough milk to equal 1 cup liquid and set aside. In a small bowl, whisk together cocoa powder and confectioners' sugar and set aside. In a large electric mixer bowl, beat butter until very soft. Add granulated sugar, vanilla and salt and beat until light. Add eggs one at a time and beat well after each addition. In a medium bowl, stir together flour, baking powder and soda. Fold flour mixture into butter mixture alternately with coffee liquid. Turn half batter into prepared pan and smooth surface. Using back of kitchen teaspoon, make an indentation 1/2 inch deep in batter. Spoon cocoa-confectioners' sugar mixture into depression. Spoon remaining batter over top of cocoa mixture. Using broad side of dinner knife, cut down through batter to bottom of pan, moving knife in zigzag pattern to create a marbled effect. Smooth batter surface with back of spoon. Bake 50-55 minutes or until toothpick inserted in center comes out clean. Remove cake from oven and cool in pan on rack 15 minutes. Run knife around center tube and outer edge of pan. Carefully invert onto rack and cool to room temperature. Dust lightly with confectioners' sugar. If you don't want to use alcohol in this recipe, just use strong coffee. Ehhhyoooo! Foodie Doodies! Hope your weekend was sweet and splendid! So I've been super psyched about trying out making these little faux cavier balls ever since I came across them a while back.
They are a good alternative to using chemicals to make molecular gastronomy though it is not a liquid center, the ingredients are much more accessible to the average cook. They will look great over cake, puddings and trifles, etc.
So what I have done here is added it to a deliciously silky smooth coffee pudding for added texture and flavour (and aesthetic contrast) topped with lightly sweetened whipped cream.
I hope you guys try it out and experiment using these faux cavier for your own creations :P Please comment below for any ideas you have that you'd like me to try or have done!
NOTE: I would recommend using mini glasses and dividing the pudding recipe into 4 rather than two tumblers as they are relatively rich after the 3 components are put together.

Iced Cafe Au Lait.
Ingredients:
1 cup brewed coffee
1 cup chilled skim milk
1 tablespoon nondairy whipped topping
Pinch of ground cinnamon
1/2 teaspoon vanilla
Direction:
1. Combine vanilla and milk with coffee.
2. Pour the mixture over ice. and top with whipped topping and a pinch of ground cinnamon.
Serves 2.

今日は、バターではなくオイルで作るカフェオレケーキをご紹介します。パウンド型でこんもりと焼いてみました。
豆乳とインスタントコーヒーのカフェオレ風しっとりケーキです。
甘さ控えめなので、ホワイトチョコと胡桃でアクセント♪

【材料】18cm×8cm×H6cm パウンド型 1台分
卵(L) 2個 殻無しで110g
きび砂糖 75g
豆乳(牛乳) 35g
インスタントコーヒー粉末 5g
太白ごま油(癖のないオイルならok)40g
薄力粉 80g
ベーキングパウダー 3g
ホワイトチョコ 40g
胡桃 25g
*フライパンで乾煎りして冷ましておく
【作り方】
*型にはクッキングシートを敷いておく。
*オーブンは180℃に予熱しておく。
①ホワイトチョコは小さく割っておく。
②軽く温めた牛乳にインスタント珈琲を加えてよく混ぜる。
③卵をボウルに割り入れてほぐしたら、湯せんにかけて人肌くらいに温める。
温めすぎないこと。
④ここに砂糖を加えて電動ミキサーで全体が白っぽくなるまで立てる。
⑤ここに②の珈琲液を加えて混ぜたら、少しずつ油を加えながら混ぜる。
⑥全体が良く混ざったら、小麦粉とベーキングパウダーをふるったものを二回に分けて加えて混ぜる。
⑦最後にホワイトチョコの2/3量を加えて混ぜ、型に流し入れる。
⑧上に残しておいたホワイトチョコと胡桃を乗せ、180℃に温めたオーブンで30分焼いて出来上がり。
*粗熱が取れたら、ラップをするかビニールを被せて乾燥を防ぐ。
完全に冷めたら好きな厚さにカットしてどうぞ^^

【Ingredients】7in(18cm)×3in(8cm)loaf pan
2Eggs(110g w/o shell)
75g Sugar
35g Milk,warmed
5g Instant coffee powder
40g Oil
80g Flour
3g Baking powder
40g White chocolate
25g Walnuts
【Directions】
Preheat the oven to 180°C.
Line the loaf pan with parchment paper.
①Break the white chocolate into small pieces.
②Add instant coffee to lightly warmed milk and mix well.
③Crack the eggs into a bowl, beat them, and place the bowl over a double boiler to warm them to about body temperature. Be careful not to overheat.
④Add sugar to the eggs and whisk with an electric mixer until the mixture becomes pale.
⑤Once you add the coffee mixture from step 2 here, mix, and gradually add oil while stirring.
⑥Once the mixture is well combined, add sifted flour and baking powder in two portions, mixing each time.
⑦Finally, add 2/3 of the white chocolate and mix. Pour the batter into a mold.
⑧Place the remaining white chocolate and walnuts on top, then bake in an oven preheated to 180°C for 30 minutes.
*Once it cools slightly, cover with plastic wrap or a plastic bag to prevent drying.
*When completely cooled, cut to your desired thickness. Enjoy
