Turn DRY BEANS Into DELICIOUS MEALS!
BULK GROCERIES:
Pinto Bean Tacos
1 lb. dry pinto beans
8 cups water
2 cups salsa
2 tbsp chili powder
1 tbsp cumin
2 tsp oregano
1 tsp salt
taco shells
lettuce
cheese
cilantro
hot sauce
Sort and rinse beans. Add beans and water to instant pot bowl. Close lid and cook on Manual, High pressure, for 25 minutes. Allow pressure to come down on its own. Drain water.
Return beans to pot. Add salsa and all seasonings. Mix well. Serve with taco shells and any taco fixings you like.
Indian Black Bean Dal
1 cup dry black beans
1/2 cup dry chickpeas
5 cups water
1 teaspoon salt
1 teaspoon turmeric
1 tbsp coconut oil
1 cup diced onion
1 tsp ground ginger
1 tsp garlic powder
1 cup diced tomatoes
1/4 tsp cumin
1/2 tsp turmeric
1/2 tsp cayenne pepper
1 tsp salt
1/4 cup tomato juice or water
Cooked rise for serving.
Sort and rinse beans and chickpeas. Add beans, chickpeas, water, salt, and turmeric to instant pot bowl. Cook on manual, high pressure, for 30 minutes. Allow pressure to release naturally for 20 minutes.
Prepare rice as directed.
In a saucepan, saute onion in coconut oil until onions are lightly browned on edges. Remove from heat and mix in seasonings. Add tomatoes and tomato juice/water. Mix well. Heat to boil then simmer until sauce thickens.
When beans are done, drain all but 1/2 cup of cooking water. Mash beans until they are dip consistency. Mix in tomato and onion sauce.
Serve bean mixture on top of rice.
COOKING BEANS IN INSTANT POT:
Pinto beans: 25 minutes
Black beans: 30 minutes
Chickpeas: 40 minutes
Kidney beans: 35 minutes
Navy beans: 30 minutes
Butter beans: 40 minutes
Great Northern beans: 35 minutes

Cajun Food | Basics with Babish (feat. Isaac Toups)
This week on Basics I'm joined by chef Isaac Toups to show you how to make some amazing Cajun dishes: jambalaya, gumbo, dirty rice, and rillons.

Ingredients & Shopping List
+ For the Chicken & Sausage Gumbo:
1 lb boneless, skinless, chicken thighs
Kosher salt and freshly ground black pepper
1/2 cup all purpose flour
1/2 cup vegetable oil
6 garlic cloves, minced
2 ribs celery, diced
1 small green bell pepper, diced
1 small white onion, diced
8 ounces beer (just not a light beer!)
4 cups chicken stock
2 bay leaves
1 pound andouille sausage, cut into coins (or smoked kielbasa)
1 Tbsp cayenne pepper
1 Tbsp smoked paprika
Cooked white rice, for serving
Sliced scallions, for garnish
+ For the Rillons:
2 pounds pork belly, skin removed
Kosher salt
2 cups red wine (full bodied like Malbec or Cabernet Sauvignon)
2 cups sugar
Fresh thyme
+ For the Dirty Rice:
1 pound ground beef
Kosher salt and fresh black pepper
1 Tbsp vegetable oil
Cumin, to taste
Cayenne, to taste
1/3 cup beer (not a light one!)
Plus roux and trinity ingredients:
1/4 cup vegetable oil
1/4 cup all purpose flour
1/2 cup diced onion
1/2 cup diced green bell pepper
1/3 cup diced celery
4 cloves garlic, crushed
1/3 cup beer (not a light one!)
2 cups chicken stock
3 cups cooked white rice
Scallions, for garnish
+ For the jambalaya:
Dirty rice (ingredients above)
1 pound andouille sausage, sliced into coins
4 boneless chicken thighs
