How To make Brown Bread(Graham)
1 c Yellow cornmeal
1 c Rye flour
1 c Whole wheat flour
2 ts Baking soda
1 t Salt
1 c Currants
2 c Buttermilk
3/4 c Molasses, dark unsulfured
Calories per serving: 209 Fat grams per serving: 1 Approx. Cook Time: 3:30 Mix cornmeal and flours in a large bowl with the baking soda, salt, and raisins. Beat together liquids in a separate bowl. Vigorously blend liquids into dry ingredients with a wooden spoon, then pour into two well-greased or buttered one-pound coffee cans. Butter two 6" squares of foil and tie around the tops of the coffee cans with string. Place on a rack in a closely covered pot, pour 2" of water into the pot, and weight down the cover for a tight seal and steam for three hours. RECIPE:
THREE INGREDIENT, ONE-RISE WHOLE WHEAT BREAD
You’ll not believe how easy this recipe is. You’ll want to make this loaf over and over again.
INGREDIENTS
4 ½ cups whole wheat flour (450 grams, or 1 lb)
1 3/4 to 2 cups very warm water
1 teaspoon salt
2 ½ teaspoons dry instant yeast (or quick rise)
(Optional: 1 teaspoon sugar)
HOW TO MAKE:
In a large measuring cup, sprinkle the yeast over the warm water. If you are going to add sugar, add it at this time. Stir well to dissolve the yeast. Set aside for approximately 5-10 minutes to activate the yeast.
In a large bowl, add the whole wheat flour and salt. Combine.
Once the yeast is proved, add it to the flour. Stir all to make sure the flour has absorbed the water. If the mixture is a bit too wet, add a little flour. If it’s too dry, add a little bit of water. With your hand gently turn the mixture over to mix it all together.
Place the dough on a floured surface. Briefly pull the dough into a ball and the flatten it out into a rectangular shape and roll it together to create a loaf shape. Into a greased 8” x 5” loaf pan, add the dough. Lightly cover with plastic wrap and allow to rise to just above the rim of the loaf pan (approximately 35-40 minutes.)
In the meantime, set your oven at 400 degrees. The oven rack should be in the middle position.
Once the bread has risen, place it in the oven. Bake for 40 minutes, until golden brown and it sounds hollow on the bottom of the loaf if you tap it with your knuckles. If you have a kitchen thermometer, the temp should be around 120 degrees.
Place bread on a cooling rack for 5 minutes. Remove it from the pan and allow to cool for about 30 minutes before attempting to slice it. DELICIOUS!!

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make homemade graham crackers. This recipe is my homemade version of a Graham Cracker (or Graham Wafer). I don't know about you, but I always find it's a lot of fun replicating things that you would normally buy. These homemade Graham Crackers taste pretty close to the original grahams, which are my favorite, so if you want a cinnamon flavor you will need to add some ground cinnamon to the batter. Although Graham Crackers are usually thought of as kid food, I really appreciate these homemade ones with a hot cup of tea. You can also use them to make a great S'more, that delicious snack that takes roasted marshmallows and pieces of chocolate and sandwiches them between two graham crackers. And don't forget that you can crush them and use the crumbs to make a wonderful graham cracker crust.

Graham bread was inspired by Sylvester Graham, a 19th-century reformer who argued that a vegetarian diet, anchored by bread that was baked at home from flour that was coarsely milled at home, was part of a healthful lifestyle that could prevent disease.Like Graham crackers, Graham bread was high in fiber and made from graham flour free from the chemical additives that were common in white bread at that time such as alum and chlorine.
