Chargrilled Oysters - If you’re a fan of Oysters, this Chargrilled Oysters recipe is for you. Fresh oysters are one of my favorite treats when I go to the coast, but my buddy Kevin over at the Boiler Plate Crab & Co. has them year round no matter where you’re located.
Until you’ve tried Chargrilled oysters you haven’t lived. Grilling oysters is simple all you need is a hot bed of coals, some fresh out of the sea oysters, and lots of well-seasoned butter. It only takes a few minutes to grill these oysters and you might as well do several dozen because they will go fast!
Here’s my recipe for Chargrilled Oysters:
Chargrilled Oysters Ingredients:
- 1 Dozen Raw Oysters
- 8oz Salted Butter softened
- ¼ cup Grated Pecorino Romano Cheese
- 2 Cloves Garlic minced
- 2-3 Lemon wedges
- 1 Tablespoons Italian Leaf Parsley
- 1 teaspoon Killer Hogs AP Rub
Directions for Chargrilled Oysters:
1. Prepare Big Green Egg or other charcoal grill for direct cooking temperature should be 475-500⁰.
2. Allow the butter to soften to room temperature. Once soft mix in the remaining ingredients.
3. Place freshly shucked oysters directly on grill grate and cook for 3-4 minutes just until the liquid in the oysters starts to bubble.
4. Spoon 1 heaping teaspoon of butter mixture onto each chargrilled oyster.
5. Cook an additional 3-4 minutes or until the tops are slightly browned and the sides of the oyster start to curl.
6. Carefully remove from grill, top with a squeeze of fresh lemon juice and hot sauce. Enjoy!

Rus's Charbroiled Oysters
24 Oysters
1 cup chopped baby portobello mushrooms
1/2 cup green onions
2 Tablespoons chopped chives
6 slices of cooked bacon, and then crumbled
2 diced up artichoke hearts
2 cups chopped fresh spinach
3 tablespoons of fresh chopped parsley
2 teaspoons of chopped fresh garlic
1/2 cup of Absinthe
1 quart heavy whipping cream
1 tablespoon of Worcestershire sauce
10 ounces of grated parmesan cheese (Aged is better)
1/2 cup of Panko bread crumbs
Fry bacon till crispy and set to the side. In bacon grease, add in mushrooms, and cook for a few minutes until mushrooms start releasing their water. Add in spinach and cook till they begin to wilt, then add in green onion, chives, artichoke hearts, parsley and garlic. Cook for a few minutes, and add in Absinthe, and simmer another few minutes. Now add in heavy whipping cream and Worcestershire sauce and let simmer until reduced by 1/2. After the sauce has reduced by half, add in parmesan cheese, and Panko bread crumbs, and add crumbled bacon. Mix well. Take the oysters that are on the half shell, or other cooking utensil made to cook oysters in, and top with sauce, and cook on a grill until everything is bubbling and the oysters plump up. I toast the top of mine with a Creme Brûlée torch after removing oysters from the grill. Serve with slices of french bread and enjoy!
