How To make Brie and Canadian Bacon Quiche
Ingredients 10 slices Canadian bacon
(1 ounce each)
cooking spray 8 eggs :
beaten
1/2 cup mayonnaise
1/2 teaspoon ground white pepper
1/2 cup grated Parmesan cheese
4 1/2 ounces Brie -- cubed
1/2 teaspoon dried Italian herb seasoning
Place Canadian bacon slices, slightly overlapping, around the side and the bottom of a 9 inch deep-dish pie plate coated with cooking spray. Set aside. Combine eggs, mayonnaise, pepper, Parmesan cheese, Brie, and Italian herb seasonings. Pour into pie plate and bake at 375 degrees for 30 minutes. After 15 minutes of baking, place foil over bacon to protect from overcooking. Yields 6 to 8 servings.

Brie chaud à la confiture d'oignons et bacon au porto- Jour de triche
Un brie chaud, quel délice! On le mange ici accompagné d’une confiture d’oignons et de bacon aromatisée au porto et sirop d’érable.
Pour cette recette, vous pouvez préparer à l’avance votre confiture, et la garder au frigo. Il ne vous restera qu’à garnir votre fromage brie au moment venu.
INGRÉDIENTS
1 fromage brie double crème
1 c. à soupe de beurre
1 c. à soupe d’huile d’olive
1 oignon, haché
8 tranches de bacon, cuites et coupées en morceaux
1/2 tasse de pacanes, en morceaux
1 c. à thé de poivre
1/4 tasse de Porto
1/2 tasse de sirop d’érable
1/4 tasse d’eau
PRÉPARATION
Préchauffer le four à 350°F.
Dans une poêle antiadhésive, faire fondre le beurre dans l’huile et faire cuire l’oignon jusqu’à transparence.
Ajouter le bacon cuit, les pacanes et le poivre et bien mélanger.
Verser le porto et laisser mijoter jusqu’à ce que le liquide soit évaporé.
Verser le sirop d’érable et l’eau et laisser de nouveau mijoter 10 minutes ou jusqu’à ce que le liquide ait réduit de moitié. Réserver.
À l’aide d’un couteau, enlever la couche supérieure sur le dessus du fromage brie et déposer le mélange de confiture sur le fromage.
Mettre au four 15 minutes.
Servir chaud avec des croûtons de pain.

Ham and Cheese Quiche
Here's a delicious ham and cheese quiche that uses Easter ham leftovers (or other fillers). This recipe is so basic that you can enjoy this egg custard with any kind of cheese and any combination of fillers. I use some of the following combinations:
Crisply Fried and Crumbled Bacon and Swiss
Canadian Bacon and Gruyere
Asparagus and a combination of Mild Cheddar and Gruyere
Chicken and Broccoli with Cheddar
I can't make a quiche without thinking about my little sister, Bobbie Arbogast, who was the queen of egg cookery when we were in 4-H. Bobbie' Quiche Bobbie won more awards than I have hairs on my head. It was delicious but, gosh, was our family ever sick to death of quiche that year as she practiced every night! Today, I am able to enjoy quiche again but none is as good as Bobbie's! Here's my attempt:
Tassie's Ham and Cheese Quiche
1 - 9 pie crust
2 c. cheese
1 c. diced ham
4 eggs
1 1/2 c. half and half
1/2 t. salt
1/4 t. pepper
1 t. dried shopped chives
Preheat the oven to 400 degrees.
Lightly spray a pie pan with nonstick spray and roll the crust to fit the pan. Place one cup of the cheese in the bottom of the pie crust. Top with the diced ham then the remaining cheese.
In a mixing bowl, break the eggs and lightly mix. Stir in the half and half, salt, pepper, and chives. Pour over the cheese and ham. Bake for 40 to 50 minutes or until a knife inserted in the center comes out clean.
Cool 15 minutes before serving. Best served at room temperature or just warm.
Serves 6.
