How To make Glazed Almond Brie
1 3/4 oz Wheel imported Brie cheese
- well chilled 2 tb Confectioners' sugar
1/2 c Sliced unblanched almonds
Red & green seedless grapes - in clusters, for garnish WITH A SMALL, flexible knife, cut away rind from top of chilled cheese. Be careful not to remove or split the rind on the sides. It will form a wall for the melted cheese. Sift 1 tablespoon of confectioners' sugar evenly over the surface and arrange almonds on top, pressing gently into place. The cheese can be prepared to this point as many as 2 days in advance. Cover loosely with foil and refrigerate. Bring to room temperature before heating, place rack 6 inches from heat source and preheat the broiler. Line large baking sheet with aluminum foil, place cheese on it and sift 1 tablespoon of confectioners' sugar over nuts. Broil cheese until top is evenly browned--about 1 to 2 minutes. Rotate cheese, if necessary, for even browning. Watch carefully so it does not burn. Use foil to lift cheese and transfer it to serving platter. Tear foil and gently remove it. Garnish with clusters of grapes. Volume I of Abby Mandel's cookbook, "Fast and Flavorful" (Cuisinarts Cooking Club, Inc., 1985).

COOKING METHOD:
1. Put brie cheese in a baking dish. Put a sprig of thyme on top.
2. Bake at 400F / 200C for 15 minutes.
3. Pour honey on top. Serve with any cracker, dried fruit, and grapes.

Honey Almond Brie Crostini
Put these little babies out and you'll have an instant party! Even if it's just for yourself :-) I love how quick and easy these are to throw together. And learning how to make homemade crostinis will serve you well for years to come. They are the perfect vehicle for so many tasty bites! The combination of sweet honey, crunchy almonds and creamy Brie tastes heavenly together. You'll definitely want to add these to the must make list! Here's what you need to know...
1 baguette
Olive oil
Brie cheese - I love triple cream for that extra creaminess
Honey
Almonds - I prefer Marcona almonds
Preheat the oven to 350 degrees. Slice your baguette into 1/2 thick slices - either straight across the bread or cut on the bias (angle) to make larger crostinis.
Arrange bread slices onto a baking sheet and drizzle the top side with olive oil. Brush the oil to distribute evenly and sprinkle lightly with salt and pepper. Bake for five minutes. Remove from the oven, flip crostinis over and repeat the above - oil, brush, salt and pepper. Bake for another five minutes. Remove from the oven and cool on the baking sheet if you're using them later, or use immediately. If using later, I recommend just leaving them out on the baking sheet. Storing them in an airtight container can sometimes make them chewy.
Just before you're ready to serve, place a 1/4 thick slice of Brie cheese on top of each crostini. I try to cut my Brie slices to match the shape of the crostini. Place back in a 350 degree oven for five minutes. If you don't like the rind of the cheese, after they've baked, it's really easy to remove. Transfer the crostinis to a serving plate/platter. Drizzle generously with honey. Sprinkle the almonds on top of each crostini (about 2 tsp...I'm pretty generous with the nuts). These are great warm or at room temperature.
