How To make Bourbon and Honey Smoke Roasted Pork Tenderloin
MARINADE:
1 c Olive oil
1/2 c Bourbon
3 tb Honey
1/2 c Lemon juice
1 tb Minced garlic
1 1/2 tb Fresh ginger root
peeled and grated 1/4 c Soy sauce
1/2 c Thinly sliced onion
2 tb Fresh sage
:
coarsely chopped 2 ts Pepper
1 ts Salt
MAIN DISH:
3 Pork tenderloins
GRILLING MATERIALS:
Charcoal briquettes 6 Wood chips (up to 8)
-- preferably fruitwood Combine all marinade ingredients; blend well. The marinade for this dish can be prepared a day in advance; marinating should go on for 24 hours. Lay the pork tenderloins in a ceramic or glass dish and pour marinade over them. Turn the tenderloins several times during the 24 hours that they are marinating in the refrigerator. When ready to cook, pat the pork dry. Preheat charcoal in an outdoor grill and soak the wood chips in water for 30 minutes. Add the chips to the hot coals. Roast the pork evenly for about 40 minutes, until its internal temperature is 165 F. If pork is to be eaten hot, allow it to sit on the edge of the grill for 10 minutes or so after it is cooked so that the juices can be drawn back into the meat. Pineapple Bourbon Glazed Smoked Pork Loin Recipe
Ingredients Needed for Seasoning Pork Loin:
1 tablespoon of El Yucateco Caribbean Hot Sauce Chile Habanero
1/4 cup of your favorite BBQ Rub
4 lbs of trimmed Pork Loin
Ingredients Needed for Pineapple Bourbon Glaze:
- 3/4 cup of Light Brown Sugar
- 1/4 cup of Favorite BBQ Rub
- 1 1/2 cups or 12 ounces of Pineapple Preserve
- 1/3 cup of Molasses
- 1/2 cup of Bourbon
- 1 tablespoon of Red Wine Vinegar
- 1 tablespoon of El Yucateco Caribbean Hot Sauce Chile Habanero
Directions: (ALWAYS WASH YOUR HANDS BEFORE PREPARING ANY FOOD ITEMS!)
Prep on a Pork Loin is minimal but it is good to remove a little of the thicker silver skin so you have a little better chew. Criss-cross score the top of the Pork Loin with a sharp knife so you can get a little more flavor on the Pork Loin.
2) Spread about 1 TBS of El Yucateco Caribbean Hot Sauce Chile Habanero on your Pork Loin to use as a binder and then season it up with you favorite BBQ Rub.
3) Preheat your grill or oven to 275° and then place the pork line on a wire rack, place in the center of you cooker and set a timer for 1 hour and rotate your pork loin 180° to help give you equal cooking throughout the Pork Loin. I like to use a a wire rack that fits in a cookie sheet pan.
4) Now is a good time to start your Pineapple Bourbon Glaze. Add all 7 ingredients to a medium sauce pan and bring to a boil so you burn all the alcohol out of the bourbon. Make sure you stir frequently so it does not burn to the bottom of the pan. Then reduce heat to a simmer and stir occasionally.
5) Once the Pork Loin reaches an internal of 125° apply the first coat of Pineapple Glaze. Repeat this process at 130° and at 135°
6) When you Pork Loin reaches an internal temperature of 140° remove it from your cooker and place it on a cutting board and let it rest for 15 minutes lightly covered with aluminum foil.
8) Slice it up and ENJOY!
